I made a super simple and delicious potato and egg recipe twice this week. I used a few ingredients for a tasty rolled potato and egg omlette meal. This looks great. I'm trying to eat 25 grams of protein per meal (recommended. Russett potatoes have 7 grams. add the 2 eggs at 6 grams each. you're at 19 grams. Add some yogurt or milk and you're there! Plus potatoes have fiber, vit C, potasium and Vit B6. fry in Olive Oil. This is a healthy meal! Plus fiber and protein help fill you up so you eat less. this actually helps with weight loss.

I’m obsessed with potatoes, black pepper & cheese if I’m being honest, especially with eggs lol & love the simple recipes I have a hard time not making enough food for an army & it’s just two of us, leftover are great but learning how to cook smaller is awesome great simple ideas & easy recipes thanks again for sharing!

If you add a little of the sea salt that goes in the grinder mixed through the peppercorn it will make your peppermill work better i also add the red pepper flakes you put on pizza in it my Daughter got me the salt with peppers together and now I just make my own I have 8 different types of salt by the stove.

Maybe a silly question. but I always have to cook for the family. 5 hungry people. Would it still be as good if i made a big batch and put it on a cookie sheet( large) and cook it in the oven Im pretty old. so standing long periods of time doesnt work well for me.

This is so simple and easy! That’s exactly why I LOVE watching your videos you’re always cooking food that isn’t difficult to make and I mostly always have the ingredients in the pantry! You’re awesome I’m going to make this as a late night snack.

I could definitely eat potatoes every day. or a couple times each day they're just so good! This is a great idea and looks delicious

That looks really good! My grandmother use to make an egg and potato pie with French fried potatoes instead of hash browns! It was one of my favorite meals! I can't wait to try this. I love hash browns!

I do something similar with leftover baked potatoes. FYI- when I made your breakfast casserole, 8 also added baked potatoes, spinach and garnished with fresh tomatoes and avocado, yummmmm!

This recipe reminds me of the episode of Time To Twice where they're camping. Jihyo is tasked with making the potato pancakes, but she messes up BAD. It was so funny. Thank you for the recipe!

I make this for my kids' breakfast on a fairly regular basis. The only change is some shredded cheddar cheese sprinkled over everything with about a minute to go cooking.

I love home made hash browns. This looks delicious. I use my ricer to squeeze all the water out of my shredded potatoes. Going to try this on Friday.

This reminds me of a Korean rolled egg side dish I used to have a lot as a kid. The only difference is the potato. Will definitely try this. Thanks!

Looks good but since I need to cut back on carbs and potassium. I will use shredded cabbage and saute it instead of potato. Great anytime.

I do something similar but add bell pepper, diced bacon and season with Bell's seasoning and salt and pepper, sometimes I top with cheese.

I would use sirachi instead of ketchup. I’d add carrot and zucchini as suggested. I would also add cheese before rolling it up.
