I like to flame roast fresh poblano peppers and make the most amazing omelette. It's so good, I've made it three times this week! This omelette is inspired by my favorite meal chile rellenos. My mama was born in 1916 and raised on a self sustaining farm in NW Texas territory. Their farm supplied everything. She was an amazing cook for her 9 brothers and sisters. She never ever, not once, scorched eggs. It just wasn’t done. So I grew up on beautiful, light and fluffy omelettes and scrambled eggs with zero scorch. Now I’ve been married these 53 years and my sweet, adorable Hub sometimes enjoys his eggs scorched. But the smell of a scorched egg omelette gives me dry heaves. Literally lol. He must make his own scorched eggs if that’s the way he wants them. I have to stand outside till the smell subsides.

i have all of this but im trying to save my poblanos for some turkey nachos, tacos, or chipotle bowl i plan to make and i wanna make a roasted poblano and lime ranch to compliment them, now otoh, i like for my omelet to be not cooked all the way bc as you said it's a preference thing, i take residual heat in to consideration so it carries over melting the cheese, ima fool for a good omelet, especially considering the endless possibilities of stuffing what you want in them, omelet looking good, chef!

I used to live in NM, and people would have a big roasting basket, if you will, and you could stop and get like a 1/4 bushel or whatever you want, full one. Anyway, they were put in a plastic bag to steam. The smell in my car was incredible! We would put green chili on everything, and it is SO good in eggs! Thank you for reminding me what I've missed! I've been in Georgia for over 30 years. I'll have to get some and make some things! Try it on a cheeseburger, it's wonderful! Thanks for sharing!

Tip: Use pink salt & you wont have to fear the negatives that come from bleached white table salt(namely that its shaved down & refined & bleached white to hide discrepancies such as how it contains traces of sand & powdered glass hence why they say salt is bad for you when in fact, it was never meant to be until man middle manned the product we call table salt which sadly most people use as their primary source of sodium, which the human body needs.

I love roasted peeled poblano in a lot of things, like King Ranch chicken, scalloped potatoes, I live in Dallas and a lot of restaurants use poblano peppers but don't roast and peel them, and it would be so much better if they did. I mean it really isn't that much of a chore and you can do it ahead.

I also don't like undercooked or soft eggs. I tried eating soft boiled eggs once since people seem to love soft/runny yolk so much and. it was just not my thing It was definitely a texture thing for me. I always thought I was weird for liking eggs more on the cooked side. But I'm glad I'm not alone!

I like my eggs on the lighter side, so I think I would cook the pablano longer to soften it up and do my eggs normally with cheese, onion and tomato and put the pablano in the middle of it. The idea is good.

You crack me up! I like my omlettes softly cooked w/whatever veg I have. I love your idea using poblanos. I've got some in the freezer and also some Hatch chilies. I'll give this a try. Thanks.

I have an ancient hinged omelette pan that is old Teflon and so you just put the filling in one side and then flip. But it inevitably gets Brown on one or both sides but will stay softer in the middle.

This looks great. I'll try it soon. I usually want my eggs to be soft and moist, but your eggs are NOT overcooked. They're just the way you like them, which is the whole point of cooking, right

I just put my poblano in a baggie after charring and I just do that first and then prepare the rest first and then peel the char off. Or you can just do it a day ahead of time if you want to.

I don’t remove the blistered peppers skin. So much flavor in the char. Chili rellenos Omelette I can eat overcooked eggs but not my preferred choice. Fluffy and moist.

Thank you for saying you like completely cooked eggs. I do not understand runny eggs or bloody rare steak aficionados. I like my food COOKED gracias very much!

I also prefer well cooked eggs, not overcooked BUT not soft! I like to saute onions and green Anaheim chili to add to my omelet and of course cheese! Delish!

Omg I'm hungry now. Lol. Ok I agree with you on the eggs. Crispy is the way to go. Oh even the fried eggs are bomb when you drop them in a hot pan. yum

My mother in law used to like her eggs overcooked. I'll never forget the first time she made me scrambled eggs I thought she accidentally burned them

I thought I was only one who took that umbilical cord nasty thing out & giiiirl I like dry overcooked crispy edged eggs. Cant stand wet runny egg.

No runny eggs for me either. The only ways I can eat them is omelette with peppers, onion, chopped tomatoes, cheese and some Cholula!
