I make those potatoes and onions all the time, it's a favorite of mine. And I will throw in whatever leftover meat I have in the fridge. Or top with a fried egg or two. I also do the hashbrowns with scramble, I just cook the potatoes at a higher heat for color and pour the egg over and it cooks almost immediately, but I cover it and turn off the heat. Maybe top it with some shredded cheese.

I have fried potato's and onions a lot, they go great with about anything. The gold or red potato's is usually what I have on hand and use them in a small slow cooker with chicken or sometimes andouille sausage with onions, bell pepper and a little seasoning. The foil wrapped on a splatter screen works great, do that often.

It all looks delicious!
Can you do a similar 1-3 ingredient recipe video involving calabacita too I always feel stumped on what to make with them besides a sopa or calabaza con pollo. I do like to add calabaza into tacos to stretch out the protein a little and get a couple extra meals from it.

I've been making fried potatoes since my Mom taught me how to when I was 12. It's very versatile and I've used several different veggies in it. I've used green or red peppers, carrots, squash and zucchini. But my favorite way is with onions, peppers, carrots and sliced kielbasa. Yummy

Tacos dorados are the BEST. I used to buy them until I realized how easy they are to make. I like to use chopped cabbage, onions, and
a little salsa to top them.

We made fried potatoes with onions every meal at my uncle’s house. He wouldn’t eat a potato any other way and wanted every meal. This was in the 60s.

I eat those kinds of skillet potatoes a lot. I love them also. When I'm in a hurry I microwave the raw potatoes a little bit to get them to fried quicker.
