Here is a very simple way to preserve lemons. All you need is a clean mason jar, lemons and honey. Its just that easy. I also like to add sliced fresh ginger. A few spoons of this amazing liquid and hot water makes a perfect cup of tea. The health benefits alone are worth giving this recipe a try. The combination of the lemons and raw local honey can aid in gut, immune system and even skin health. This recipe is a great way to either maintain or even give you a boost to your immune system. INGREDIENTS 2 to 3 medium to large lemons (be sure to thoroughly wash) 1 to 1 1/2 cups honey (I used raw local honey) 12 oz mason jar (I boiled jar in water for 10 to 12 minutes)

The lighter in color, lical raw honey is best. Try to find a local bee master to purchase your honey. Non-pasteurized. Scrub your lemons with coarse pickling salt and boil for about a minute to release any pollution, wax or chemicals. Equal parts of sugar and lemon or orange slices. Cap with glass jar lid. (Check your antique stores, or use glass top snap lids. Never let it touch metal as it's too acidic and eats metal. Plastic spoon is ok. Eat it as it is or pour hot water for a tea. It's delightful! Only have to store it for about a week to perfection. Is a Japanese and Korean beverage.

I have made sliced lemons in honey in the fridge this way, and it lasts quite a while, like several months. Cut the slices into wedgy shapes to fit a LOT in the jar. Every bit of lemon has to be touching honey, so don't skimp with the honey. A generous spoonful of these lemon chunks is really great in a big mug of hot tea, sweetening it nicely and providing a very sophisticated lemon taste. Make sure you eat the lemon at the bottom of each cup! It's super-lemony goodness. I really love this condiment.

There is no such thing as! kosher salt! This irritates me. Salt is salt and if it is sea salt - it is sea sat and if it is pink salt that is what it is. Koher refers to food prepared and handled and cooked in a Jewish way - and it particularly refers to the way the Jews kill animals - whch is called halal killing by he Muslims and it is utterly disgusting and incedibly cruel. Even Hitler banned such thing in GErmany - and he banned vivisection or any experimentation on animals.

I usually buy yujacha at the grocery store, but this is something nice and simple to make at home quickly. :) It really, really does help with colds. Everytime my husband starts getting sick, I make him drink some yujacha or this and while it's not a cure, it helps him from getting too much worse and get better faster. :)

Correct me if I'm wrong, but this stuff (as delicious as it sounds and looks) has nothing to do with tea. It is hot lemon water and honey. Since there are solids that give taste you might call it an infusion, or whatever it's called in english. You can't really call it tea since there are no tea leaves in it.

Hey Mama do you know that combination with ginger included is used for medicinal reasons? Ginger root is good for weightloss drink ginger tea with lemon and honey little bit before any food in the morning and through out the day

This is great because original lemon honey preserve (yuja cha) requires yuzu citrus, which is available only in Korea and Japan, it's very difficult to buy them online. Lemon is the best alternative to them. Thanks for the recipe.

I love this recipe! My mom taught me this last week actually and we also add a teaspoon of raw basil seeds for extra health benefits! I have it first thing in the morning and for bedtime.

I made some about an hour ago: -) I can't wait for it to be ready to use if a few days! I used fresh-cut organic ginger as well as 2 organic cinnamon sticks to kick it up a notch!

I found out that the other end of the wooden spoon is really useful to push lemons in. And I always wash my lemons with white vinegar, rinse them and dry them with paper towel.
