Today I am tender beef tongue tacos. I will chop and stew the beef tongue to create lengua entomatada. I recently traveled to San Antonio and tried lengua entomatoada at a local caf. It was tender and flavorful. The meat was melt in your mouth tender stewed in a a rich tomato salsa. Ingredients 3 lbs beef tongue 1 Tbsp salt 2 dried bay leaves 1/2 tsp black peppercorns 5 to 6 cloves garlic half of a large onion 3 1/2 quarts boiling water SALSA 6 large Roma tomatoes 2 tomatillos 1 large jalapeno 1/4 large onion 5 cloves garlic 2 dried guajillo chiles 1 tsp ground cumin 2 tsp beef bouillon powder

it looks delicious! I love lengua tacos! Funny how some people just don't like it because it's the tongue but they like steak they like beef I think someone should do to those people what my mom had to do! she had to trick us into eating it when we were teenagers because we thought it was gross but once we ate some it was delicious! my mom prepared it's similar to how you made it. my mom called it lingua guisada! We ate it for dinner and then the next day she told us what it was! it was delicious and so tender and just great I mean people if they can trick them into tasting at the ones that don't want to try it they'll love it just got to give it a chance! the way you're cooking it oh my God looks good I'm going to try the recipe thank you!

Lol i was just telling my husband last nite that idk why people choose to eat tongue or brain or rocky mountain oysters. During a zombie out break, when theres nothing else to eat, ok. Maybe. But i just cant. To each his own though. No judgement. I also dont eat deer meat either. None of it. Its a mind thing. My husband on the other hand, eats everything.

Where on earth did you find a cow's tongue! You must have a good butcher shop nearby. I haven't cooked a tongue in more than 50 years. I remember being on the phone with my grandmother most of the prep time because I was intimidated by it. But it was easy and so, so good.

I love lengua tacos, but for some reason only if paired with an extremely hot red salsa. This would and I could add a handful of arbols to it. Already know I'll be the only one eating it in my family anyway, might as well make it as hot as I like it.

Lengua is my absolute favorite taco (when done right. I tell everyone it's like the most fabulous pot roast you've ever had, and the sauces you can put with it are endless. I prefer mine en salsa verde, or chile colorado.

Ok, I have to ask, my Mom raves about tongue that she had as a little girl, but I have never tried it, whats it taste like? Is it as good as she says it is? Says it taste like great steak. This looks really good.

Can't wait to try this recepie! My sister's live in San Antonio. The last time I was there on vacation, they took me to Tink-A-Taco! The barbacoa tacos are the bomb!
