Today I am making a creamy spaghetti Mexican style. This is called espagueti rojo and it's so flavorful. The pasta is great on it's own or alongside roasted chicken. Ingredients 1 lb spaghetti pasta 1 or 2 Tbsp chicken bouillon for pasta water 2 chipotle chiles plus 2 Tbsp adobo sauce 1 cup Mexican table cream 2 Tbsp cooking oil (for pan) 1 shallot 2 to 3 cloves garlic 2 Tbsp tomato paste 1 1/2 cups reserved pasta water 2 oz cream cheese 1/2 cup grated Cotija cheese salt and pepper to taste

Oh dang, this looks so good! And I finally have most of the ingredients already so I won't need to make a special trip lol is regular sour cream a decent substitute for crema mexicana? I don't think I've seen that particular product in my neighbourhood

I noticed She Never Mentioned Salting the Water Prior To Adding the Pasta.
Pasta being extremely Bland Demands Salt while Cooking.
I recommend Using Salt Substitute ( it gives the same result as Regular Salt, yet better for your health.

Hi A! This recipe really does look delicious. I never used Mexican Creama. Can you substitute Sour Cream or are they too different? I shall be trying this one day. Looks so. tasty. Great video my friend!

Do you have a recipe to preserve chile de monte? My dad has several bushes and he wants to put them in vinegar. I don't know how to phrase it to Google a vinegar/preserve recipe. Please help!

This looks yummy! What can I use as a substitute for Mexican Table Cream? Stores near me don't carry it. Very limited pickins in my next of the woods.
