Here are three types of Mexican sweet bread I make at home. I will show you how I make conchas, maranitos and empanadas just like the Mexican bakery. Ingredients (Conchas) 4 fl oz (118 ml) warm evaporated milk 1/2 tsp sugar (for milk) 2 1/4 tsp (7 g) dry active yeast 4 cups (500 g) all purpose flour ( I used bread flour) 2/3 cup (125 g) sugar 1 tsp (5 g) salt 1/2 tsp lemon zest (optional) 1/4 tsp ground cinnamon (optional) 1/4 tsp ground anise (optional) 3 large eggs (room temperature) 1 Tbsp vanilla extract 8 Tbsp (113 g) unsalted butter (softened) TOPPING 1 1/4 cup (145 g) confectioner's sugar 1 cup (130 g) all purpose flour 1/4 tsp vanilla extract 8 Tbsp (113 g) unsalted butter BAKE 350 F / 176 C for 18 to 20 minutes INGREDIENTS (Maranitos) 3 1/2 cups (455 g) all-purpose flour 1 tsp (4 g) salt 1 tsp (4 g) baking soda 1 1/2 tsp (3 g) ground cinnamon 1/2 tsp ground ginger 1/4 tsp ground anise (optional) 1 large egg (room temperature) 3 Tbsp (45 ml) whole milk 1/2 cup (98 g) piloncillo (or dark brown sugar) 2/3 cup (225 g) molasses 11/2 tsp vanilla extract 2 Tbsp (28 g) unsalted butter (softened) extra flour for work surface 1 large egg for egg wash INGREDIENTS (Empanadas) 2 1/3 cup (300 g) All purpose flour 7 Tbsp (98g) softened unsalted butter 1 1/2 tsp (4 g) active dry yeast 1 1/2 tsp (4 g) ground cinnamon 1/4 tsp salt 1/3 cup (60 g) sugar 2/3 cup (160 mL) warm milk FILLING INGREDIENTS 15 oz (425 g) pumpkin puree 3/4 cup (150 g) piloncillo or dark brown sugar 1/2 tsp ground cinnamon 1/4 tsp salt 1/2 of a vanilla bean pod (or 2 tsp vanilla extract)

Maranitas are my favorite. We've always called them Ginger Pigs although there is no ginger in them. I guess because they look like gingerbread men in cute little piggy form. I always eat the little feet and snout first because they are the little crunchy bits and leaving that soft cookie body for last. My other favorite is that little yellow cake/bread with the red berry filling and the streudel crumble on top. I don't know what it's called. If you know how to make that sweet bread, I'd love to know how, as well as the name of it. Thanks for the recipes! These look wonderful.

Just had surgery on my hand and can t make these yet. Love marranitos but was always too intimidated by conchas. This helps so much thank u!
