Today I am making Tacos Gobernador or Governor tacos. The origin of these delicious tacos dates back to the 1990's in Mazatlan, Mexico. Governor Francisco Labastida Ochoa mentioned that he loved the shrimp tacos that his wife makes. The owners of Los Arcos restaurant got wind of this and wanted to recreate the Governors wife's shrimp tacos. With the help of the Governor's wife, Mrs. Mar a Teresa Uriarte de Labastida, Tacos Gobernador was created. The restaurant made this a menu item and prepared them for the Governor's visit. I believe corn tortillas were used in the original recipe. There are so many variations and all equally delicious! Ingredients 1 lb (454 g) fresh large shrimp 2 Tbsp olive oil 1/2 medium onion 2 Roma tomatoes 1 fire-roasted poblano pepper 1 tsp salt 1/2 tsp smoked paprika 1/2 tsp lemon pepper 1/2 tsp onion powder 1/2 tsp garlic powder 8 to 10 corn or flour tortillas 8 oz melting cheese of your choice garnish and top with crema and your favorite salsa A33L: The story goes that tacos gobernador (governor tacos) were created in the State of Sinaloa back in the 1990s, to surprise the then state governor, Francisco Labastida Ochoa, after he told some friends that he loved the shrimp tacos his wife made.

Tacos gobernador are the best! I learned to love them at Los Arcos Restaurant in Tijuana, MX years ago. They are made with corn torts there and they are the bomb! Luckily, a local restaurant makes them almost exactly like Los Arcos. Thank you for introducing more people to tacos governador!

Crazy but I just made these shrimp tacos tonite. no green peppers (although I may pu t them in some time. Love tacos. probably will have them again tomorrow for tacos Tuesday with ground beef.

Looks great! But, for my unappreciative house, too much work, LOL. They'd be almost as happy with Taco Bell. Sad, I know.
