Today I am making a simple and comforting dinner. I will show you how to make a Mexican squash dish called calabacitas. I will also be making quesadillas with queso fresco. Ingredients 2 Mexican squash or (zucchini) 2 roasted poblano peppers 2 ears of fresh corn 2 to 3 Roma tomatoes 2 cloves of garlic 1/2 medium onion 1/4 tsp Mexican oregano 14. 5 oz of chicken broth salt and pepper to taste

Thank you for another recipe I'll be able to cook without a stove/range/oven. I'll be able to make this just warming tortillas in microwave, cook the stew in an electric skillet then remove to keep warm (and rewarm in microwave if needed, and then make the quesadillas in the same skillet. Looks so healthy and tempting! (Pretty sure I can get _some_ char on the poblanos in the electric skillet otherwise and until I get a REAL stove, I'll swap in some canned and drained peppers)

I have been making this for 50 years. Never had it with the pablano peppers. But I sure am going to try it. I learned this recipe from my mother in law. I like it with a little longhorn cheese on top it melts and gets creamy. Thank you for all of your great easy recipes.

Simple & delicious! My mom also use to make it when I was a child minus the poblano pepper. I married a man who likes NOTHING so I ll end up making two separate meals as usual.

Oh, yummy! Not authentic, but I'd add some shredded chicken breast to the stew. Just me, though. I'm protein deficient so always adding protein wherever I can. Yum!
