Thank you for sharing this technique. I love enchiladas! But. we live in Las Vegas and from the beginning of May through October the oven is off limits! It heats up the house and the A/C has to work overtime to cool it off. Now I can make enchiladas year round

I roll and bake my enchiladas on a cookie sheet bcz it's easier to serve them. Before I put them in the oven after the enchiladas are prepared, I place another cookie sheet (the same size) upside down on top of the other one and bake.

I feel so dumb; I never thought to put cheese in with the shredded chicken. Chicken enchiladas are my absolute favorite and my go-to has always been Don Pedro's in San Antonio. I will definitely be giving these a try

I've done this with my electric skillet when having company, they stay warm and I can place them on the bar counter so they can serve themselves. When my kids visit it's also a perfect way

I use this method all the time when I make my lobster or salmon/shrimp enchiladas. I use a different sauce, but it looks the same only sauce is not as thick. It's all good any sauce works.
