Thank you for showing your fix for the soggy bottoms! Every time I ve tried making these this happens, and I ve been losing my mind because every video I ve seen shows the potatoes coming off crispy immediately out of the pan. Thought I was doing something wrong or that my oven was wonky!

I'm not going to the store to buy some baby potatoes. I got some big bazooka potatoes right here and will be adapting this recipe to what's on hand. If it starts with potatoes, not even I can mess it up.
