Today I am making quick and easy green enchiladas. These can easily be a three ingredient meal. Marcie_does_it: I was also once a broke, single, 20-something. My struggle meals were the best and I look back on those times fondly. I would have LOVED these enchiladas. Yum! Can t wait to try.

After my divorce, with four children to feed, I ate a lot of refried beans with green chile, or leftovers, so my kids could have all of the homemade from scratch version of hamburger helper or minestrone soup or albondigas, or goulash I had made. Those were my stretch meals for my son in high school football and growing children. Thankfully, they all remember my meals as being great
I also made mild chili mac and chili bowl, every possible thing to stretch ground beef, chicken, tuna, or eggs.
Rarely bought cold cereal - little nutritional value and a waste of milk. It was a treat.

As a broke mama with 4 kids, one of our go-to meals was bean tacos. Heat refried beans, soften my tacos & top with shred cheese. We also had refried bean omelets; prepare the omelet, smear with refried beans & top with shred cheese. Top Ramen topped with a sliced boiled egg & minced green onion. 2 boxes Kraft Mac & Cheese, can of tuna, green peas to mimic Tuna Noodle Casserole. A can of Dinty Moore Beef Stew over rice (that I dropped a beef bullion cube in) Of course, cheese quesadillas. Hot dogs. Chile Fritos! Fritos Corn Chips topped with canned chili and shredded cheese! We were so broke!

Broke. Single female. Just out there dodging all those employed men who want to date and potentially marry you, and buy you dinner, a house, a diamond ring, and a car? Let's just be real about the fact that most of you ladies were out here living life like a feral cat. Y'all just decided (at some point) to come in out of the rain. Y'all aint gangsters. Y'all never were.

My mom was a single mom of 4. She would make a corn tortilla with a whole winnie inside slid down the middle with a slice of mozzarella cheese and fry them crispy in oil. She couldn t afford to buy corndogs in a box so she d make us that they re amazing I still make them and have it with some ketchup & mustard

1 can of tuna, 1 can cream of mushroom and rippled potato chips. mix tuna and soup and heat in microwave. crush up chips and spoon tuna mixture over and eat. You can also add peas, but I don't like peas. You could also toast some bread and spoon the mixture over it and add salt to kill the fishy taste.

Love your tortilla video. These look yummy. When we first got married and we re broke, I would make a large pot of pinto beans. Monday would be bean burritos, Wednesday tostadas and Friday chili beans. I would love your ideas on how to make beans exciting.

When I stayed with my in-laws in Mexico this was breakfast every morning. Homemade tortillas, salsa, and cheese, heaven on earth! Tight budget, quickly realized cheese garnish on top was more than what was inside. Can't wait to go back.

I bought 2 packs of corn tortillas, 2 one pound bags of rice and a two pound bag of dry beans and would cook them and make them last about a week. I had my Goya adobo seasoning and seasonings and that would be it.

Hi A! This sure looks delicious to me. I never bought corn tortillas. What's the difference from flour ones? I'm going to try this. Looks super yummy. I see your Son likes them. Great Video.

Now days with food prices so high thanks for reminding me. I feed my boys scrambled eggs and hotdogs with homemade beans and tortillas. That's are favorite struggle meal.

We ate something similar but instead using Dennison s chili beans. Rolled corn tortillas with cheddar cheese and topped with chili beans. so delicious and very filling

You go on and on about you cooked this when you were struggling. I think everyone gets it the first time. You repeated it 5 times. It becomes ridiculous
