Ready here One of the most popular Vietnamese street food dishes to eat in Saigon is com tam suon nuong, the combination of broken rice with a grilled pork chop on top of it. Its one of the most common Vietnamese food meals throughout the city, often available at street food restaurants and even more sit down restaurants as well. When I was in Saigon, eating com tam suon was one of my favorite meals, and I ate it frequently. But there was one place that I ate, known at Com Tam Ba Ghien, that topped all others. Located on ng Vn Ng, just off Le Van Sy road in Saigon, Com Tam Ba Ghien is well known as one of the most legendary and most beloved restaurants that serves Vietnamese broken rice and pork chops. I could actually smell the aroma of the pork grilling when I was walking down the street to the restaurant - it was a beautiful smell. The restaurant does both takeaway and sit-in, and though there were plenty of people doing both, I decided to take a seat at the front of the restaurant at one of the communal metal tables. You could order just a typical plate of broken rice topped with a marinated grilled pork chop, but to go the extra mile, youve got to eat the grand slam of all Vietnamese dishes, known as cm tm b ch sn trng p la, which basically translates to all things pig over a plate of broken rice with a fried egg on the top. My order came to the table quickly after I had ordered it, and it was hot and fresh, the rice was soft and fluffy. The pork was then placed on top of the rice, a huge sized pork chop that was sweet and salty, probably marinated in a mixture of soy sauce and sugar, then grilled over hot coals until slightly charred on the outside and juicy and tender on the inside. Surrounding the pork chop came a slice of Vietnamese meatloaf known as cha trung hap. The meatloaf included a mixture of mung bean noodles and minced pork, seasoned with salt, pepper, and fish sauce, and topped with egg yolk. The Vietnamese meatloaf was pretty good, nice and salty with a delicious texture. Also on my plate of com tam suon was a pile of shredded pig skin, known in Vietnamese as bi. It wasnt my favorite component of my meal, but wasnt too bad - the skin was a little rubbery and chewy, with not much flavor. There was also so shredded pork meat, which was delicious. Finally, on the very top of my plate was an op la, a fried sunny side up egg. The egg added the absolute extra touch, both protein and the marvelous yolk sauce which coated everything and seeped down to the rice. My plate of com tam suon nuong at Com Tam Ba Ghien was then drizzled in a spoon of scallion oil, and a scoop of Vietnamese cucumber, carrot, and daikon radish pickle. The final component of my meal was a side side of Vietnamese sweet fish sauce with a touch of chili in it as well. The mixture was absolutely sensational, everything from the pork to the meatloaf the pickles and sauce. Although com tam suon is popular and widely available throughout Saigon, one of the best and most famous is Com Tam Ba Ghien. If you love to eat grilled pork and rice, youre absolutely going to love this restaurant when youre in Vietnam. i'm vietnamese and cant believe that getting through 24 years of my life and i just tried this dish for 1 week. but i was really fall in love with it( because i'm in HaNoi but the dish is originally and mainly from HCM city and it's like apart of the culture in there. The looking is a bit shabby and like the cheap food, the seller dont care much about the display or decoration, it's just like the box lunch or the normal meal at home, not like in the restaurant. But that's not a problem, whenever you dig in this dish, you wouldn't be able to stop, and will not have the time to care about it. It's so stunning despite of the simple outlook. That the best thing that i love about this food, or so much others food in VietNam. It reflect our vietnamese life, it's affordable( 2-3), it's come from the normal ingredients and the restaurant of this kind of food is always like that, not the fancy one not so eye-catching but everyone from all walks of life just step by and eat. But luckily vietnamese can make it become the delicious dish for every people( even the low level or the rich people) to have the chance enjoy good meal everyday. Ingeniously, the brooken rice they serve in this dish is normally for the poor people, the whole-range rice is for the well-paid, and they make it become to the top. When it comes to food, there is no boundaries, right?

With all of the so-called diversity in the United States, why can't we get glorious dishes like the one shown here? Most all of the Vietnamese restaurant here in the States seem to always become too Americanize and lose their authenticity. I guess you have to go to big cities like LA, NY, Chicago, San Fran, and the like to get something that's close to the real deal. I wish I could magically dive into this youtube video and dine at this restaurant.

Wow this is my favourite dish Com Tam Dac Biet ( Combination Pork Chop. I miss my Country Food so much, and I live in Australian for 32 yrs and I come to Australia since 1984 when I was 11 yrs old. Our Food Back Home is Always taste the best and is really Cheaper Price Over there. Make Wiens you chose the right country to go there and eat. The Best Food Ever In The World: -): -): -)

Hi Mark. I was wondering if you could make a cooking video on how to make the grilled pork chops in this video. It is one of my favorite things to order from Vietnamese places. However, it is rather expensive to purchase, about 8 for a plate of broken rice and pork chops. It would be awesome if I could make it myself. Thanks

Great video. This dish is my absolute favorite at the various Vietnamese restaurants in Phoenix and Tucson. The one advantage with the broken rice is that it captures the grease and the juices of the pork chop. In some places in this area, there is a tendancy to overcook the pork chop.

I am a pork freak. that looked so good and all that smokiness YUM There is nothing like egg added to meat. protein on protein. Like a bacon and peanut butter sandwich YUM. So good to know the recommendation of a viewer hit the mark with you.

I am also a chili addict. Appreciate Mark's very clear pronunciation of English, which make it quite easy not to miss a word of what he says. Vietnamese food is (still) not common in our country.

I never see Com Tam this good and generous in CA, USA There are plenty of VN restaurant in northern and southern CA, their portion is about half the meat, cost around 5 - 8x as much as the real one in VN
