PATTANI, THAILAND - Welcome to Pattani province, in the deep South of Thailand! Today, along with my friend Muhammad from Papa Tagu visited two communities - one for a famous durian in the mountains. And two to the sea to a community that specializes in fourfinger threadfin fish, which is also called an Indian salmon Durian Monthong Sai Khao ( ) - First we headed to a village called Sai Khao, which is a beautiful place on the side of the mountain. They are known for their fruit and especially for durian. They grow a type of monthong durian which is found around Thailand, but their version is slightly different and known to be the best quality in Thailand. It was exceptionally creamy and perfectly sweet, rich, and thick. Definitely the best monthong I ve probably ever had. Still, I do prefer the small durian baan which usually have a stronger, smellier, and bitter taste. But it was a great experience and great to see the durian at the source. Fourfinger Threadfin (Indian Salmon ) - Next, we took a short drive to a coastal community where they fish for Fourfinger Threadfin (also known as Indian Salmon, and they preserve the fish in this village and then sell it. You ll find this fish all over Thailand, and most of it comes from the coast of Pattani and Narathiwat. They set up a makeshift kitchen and deep fried pieces of the fish and finished it off with a huge amount of lime juice, chilies, and shallots. It was one of the greatest bursts of umami ever - so much flavor and age in that fish. If you close your eyes you might have thought it was a very mature aged cheese. Another amazing day in Pattani, delicious food, and incredible people!

The Native American Indians used a similar technique in preparing jerky using Bison. The bison meat was cut into large pieces that were salted and hanged over branches, wire, etc, and allowed to dry for weeks creating what is now called jerky. Likewise, the Scandanavian countries make cod that is salted and placed in wooden boxes for curing. Their salted cod is available for sale and sold in these small wooden boxes.
It is so interesting to see how different cultures use similar techniques that have been used for centuries. Great work Mark.

Good morning from Texas Mark, Great video and the fish looks yummy but the Durian, I would love try it but here in the states we don't have it. Do you think if I order some seeds that they might grow in the states? Well Mark you and your family have a terrific day & stay safe and happy. That's porridge/congee and it tastes plain, so usually Asians especially Chinese eat it with a variety of salty food such as salty eggs, salty fishes, or meats. Any kind of fish can be turned into salty fish and I don't think that fish you ate is called Indian salmon. I think it's called a Threadfish.

this smells and tastes horrible! fish is basically meat which is dried for 20 days! imagine chicken being dry for 20 days lol. they keep adding limej uice to remove the rotten taste. it smells of rotten fish not cheese party. lol

I studied fishology. when a fish smells like cheese and have a custard texture that means that fish is rotten just saying.
