In the final episode of the MUNCHIES Guide to Sweden, we explore the growth and popularity of New Nordic Cuisine. Our host Ivar travels across the country to meet the chefs who are influenced by defining this new culinary tradition on their own terms. First, Ivar visits Ekstedt in Stockholm, where owner Niklas is going back to basics and cooking all his dishes with traditional Nordic techniques. He also visits Koka in G-teborg-one of the best restaurants in the country-before finishing our trip at Bastard in Malm-, where head chef Andreas Dahlberg has his own take on the New Nordic manifesto. It sad that they want a copy France everybody is been brainwashed by these frogs Sweden is a viking country what happened to medieval style dining it's like everybody frowns upon that or maybe they don't know how to cook that way anymore with large portions making people happy not putting a little bit of crap on a plate with a little sauce that's not what a viking country should be they should copy France stick to their roots I'm not Viking but if I go to a viking restaurant I want to see a whole goddamn Pig on the table whole fish a quarter or half a cow a giant beer mug and a big ass axe as one of your utensils for the large portions of food that should be on the table now that's a viking food

I have to agree with Dahlberg, ordinary/traditional Swedish food and spices aren't that exciting. But just as it's stated in the video and by him, Swedish chefs have gathered a lot of techniques, spices and ideas from cuisines around the world and instead of just importing them right off the bat, Swedish cuisine is now fusing it with ingredients that exist locally. And there are some AMAZING ingredients in Sweden, so I do believe that this will up the Swedish cuisine to a whole new level. Tourists can say that Swedish food is boring all they want, it's just a matter of a couple of years before Swedish food will get to its A-game.

this is the coolest documentary EVER, totally makes me want to learn more about the culture, people, food and history. also like swedish/european men are DEFINITELY the starters of hipster life you can totally tell, i mean yea it's an understatment to compare these men to hipster of the US but seriously man they are so real! and innovated raw people with great sense of style and cool tattoos

You know whats funny? I work in bussines of chanterelles and we export them to Sweden from Latvia. --Chanterelles are also mine favorite mushrooms. my mother and basicly everybody in Latvia cook them in pan with butter, sweet cream, little pieces of bacon, black pepper, and fresh greens (dill, parsley, spring onions n stuff) and serve it all with new potatoes. It-s latvian classic

xD it is so hilarious to hear when he said Uggla instead of Owl, but i do have to admit that the Swedes are probably the best English speaking ppl (except for countries that has English as major ofc, i mean just look at it even older ppl knows how to speak English fluently, the pronunciation is perfect: o

This skinny guy is obviously knowing what he is doing, but watching him eat I am reminded of the engine drivers of the old trains who shovelled coal into the fire to keep the beast fed. You should take time with your food friend, not eat like you think someone will steal it from you!

It's my dream to visit Sweden ]: i have an aunt that lives there, and a good friend as well. I'm a vegetarian but man i wouldn't mind putting that aside to try all their great food. Wish i had a show so i could go out and have all kinds of fun adventures like on this video series: D

Factual error he said -hearty food like meats and potatoes-, but potatoes were new world food adopted by many Europeans and claimed to be their own. But overall great piece and I really like the food and the host.
