When visiting Japan, tourists often make ramen and sushi the top priorities on their culinary explorations. But the country-s cocktail scene is not one to be overlooked-and that's especially the case with Hidetsugu Ueno, the bartender and owner of Bar High Five. Nestled on the fourth floor of an office building in Tokyo's Ginza neighborhood, Mr. Hidestsugu, with intense focus and attention to detail, concocts libations worthy of any cocktail pilgrimage. And if you-re lucky enough score a seat in this tiny bar, you will certainly see why

This man seems to be very knowledgeable and proper. Yet at the end, he says he doesn't drink alcohol at all because he is too weak to it. yet the whole video he talks about trying every single drink before he serves it, and it certainly doesn't show him spitting it out (although that may have been his wish now that I think about it. Being so proper and refined, he may not have wished for those particular shots to be aired)

I-ve seen like 3 videos of this bar but why doesn-t he use a fine strainer. Seriously who wants tiny shards of ice in their drink. Also not gonna lie the bar itself looks like a box made of vinyl wood. Am I the only one who thinks it-s a big overrated when so many small speakeasies and bars go untouched. Coolest thing about this bar is the ice thats a rare skill but he-s wrong other bartenders can do it.

Istg I can listen to this guy saying -lemon juice- for three days straight and still want more. Edit: this comment is not meant to be disrespectful in any way, I have huge respect for this guy.

Doesnt drink alcohol because he's weak for it. Meaning he likely towed the line on alcoholism. Yet he can still taste drinks and chooses not to partake. I honestly think that adds to his class.

This is the guy who makes drinks for the Kingsmen from the movie -Kingsman: The secret service-. --He also advises those gentlemen on which drink to choose and trains how to drink them.

adding alcohol even ina coke cola tastes horrible, better of jus drinking the cola or juice by-itself with ice if needed. only alcohol I would try is just beer out the bottle that's it.

But if you taste it before its shaken or stirred, then it hasn't mixed yet so how could he know if it has the right balance? Hes just tasting 1 or 2 ingredients.

I am actually impressed by his english. As far as I know many Japanese barely speak any english but this man has great speaking and I just love the accent: D

Honestly bartenders should be taken more seriously, making drinks is basically an art because drinking was and still is a big part of some cultures
