When you want sushi in Texas, you go to one of Tyson Cole's restaurants. Uchi, Chef Cole's first restaurant in Austin, is where his life as a restauranteur began, but his dedication to perfecting the art of sushi started long before. Starting as a dish washer, Chef Cole knew that all he wanted to do was become a sushi chef, so he worked as hard as possible to achieve that. We headed to Austin to see where Cole's career began and learn more his approach Japanese cuisine

Kirin's Sushi Chef normally highlights respectable chefs, but this guy is a POS. -This fish is the fatty part so it's fricken delicious- what a shit statement from an owner/'executive chef'. The type of dude that forces himself into situations and lacks the empathy and self awareness to realise maybe it's not the right choice. --Don't get me wrong, the concept, the staff and the menu seems like a solid idea, but the owner presents himself as something he is not, and that level of pretentiousness is unforgivable. Shame on you Kirin!

To be a master of any skill or craft or trade requires tremendous passion and desire to always learn and be better. This has all of that. I dont care if he is white, black or purple, this guy is extremely sucessful and is making some of the best sushi in the world. Better then 90% of restaurants in japan. You will never see him on restaurant takeover or kitchen nightmares.

Outdated in concept and an expensive trap to suck money out of people suffering from Nobu Complex living in hick country. Typical food riding-out on novelty, and playing on all too known tricks brought by faux-Japanese fashion aiming at plate decor, hype on freshness and basically obfuscating the real value of what food should be or any sensibility outside of emulation.

So many racist comments down here. I'm Mexican and if someone prepares me 'Authentic Mexican food' and isn't Mexican I could careless. As long as the food I'm consuming is sanitary and delicious who cares. What's the problem with a white guy prepping sushi? It's 2016 grow outside of your sectarian mind, we have self driving cars for Christ's sake.

I'm sorry I'll stay with traditional, you see a real sushi chef will never reach perfection but will strive for that goal his whole career, your an American sushi fusion restaurant and your doing things to entice customers to your restaurant that has Japanese flair, it's like your just doing it your way.

I have seen so many crazy psudo-sushi fusion videos, but this was not one of them. This chef is a good translator of sushi and Japanese culture in a decent American way. The dishes looked really believable and delicious even to my Japanese eyes. If it were in NY, I'd definitely pay a visit.

i feel that they coming from a very dishonest reason, the chefs can do any type of food he wants but using a culture food as a staple to lure people in so you can try out your fusion is very underhanded. If you were known for your talent in food you wouldn't need to ride on a culture food.

This place is overrated. They take risk which I give them credit for but the flavors strike out too often. I'll never forget this one roll I had which was pretty much a Vietnamese spring roll cut up and drenched in fish sauce. For 18 bucks.

Too much videos about sushi. I mean, hey, I know that sushi requires so many techniques and it's not just a combination of rice and raw fish. But there are so many good food to talk about, why would you turn sushi like sth mysterious!

Ate here last month. I spent -200 here and left hungry. What irritated me is that they are serving Japanese food AND demanding high prices, the servers should be able to pronounce the Japanese words correctly.
