We figured out a way to eat your greens while eating macaroni and cheese. MUNCHIES Culinary Director, Farideh Sadeghin, shows us how to make this revolutionary mac recipe that is cheesy, rich, but also bright and herbaceous. Make this immediately

Can-t you guys do even one single video without swearing? Seriously, I hate to sound like a prude. I swear all the time myself. But it-s nice to be able to show kids videos about cooking to get them interested in it, and interested in eating vegetables and healthier food. But for whatever reason, you guys just have to ruin it every single time with the language. I just don-t get it.

So there I am, in the midst of this Corona virus thing having to cook inside (though I cook every day. I had a brain lightening strike. -could I make GREEN Mac-n-Cheese? Well, I YouTubed it to see if anyone else dared to try this thunder storm. Wouldn't you know it? This lady totally made GREEN Mac-n-Cheese. Love it!

If you have a small shitty food processor mix everything up in a bowl first. Your greens and your liquid then process in small batches transferring to another bowl with a spatula. A beschamel sauce with cheese in it is a mornay sauce BTW. I hate being that guy so please don't at me.

still isnt that healthy. better just to eat a fresh spinach salad without all the cheese and simple carbs. but if i wanted feel a bit better about eating mac and cheese, i would like this. but instead of a cheese topping, i would do a breadcrumb with a bit of cheese instead

Farideh liked my Instagram comment the other day, and it was basically the greatest thing that's ever happened to me. Does that say more about how amazing Farideh is or how much of a bloody sham my life has been thus far? Oh yeah. green mac n cheese! It looks tasty.

If you want really green mac, substitute kale for spinach and avocado for butter. Then use white cheddar and gruyere or mozz for the cheeses. I use gruyere in the pesto instead of parmaggiano.

So I really loving the recipe. But hating the cussing. So not necessary. Not kid friendly either. You might want to take that into consideration, for all the kids who love to cook.

Add some chopped pine nuts to that final layer of cheese and perfection is achieved. I'd probably reverse the basil to spinach ratio, but I'm sick like that.

How can you just broil it when it comes out of the fridge and be hot inside? Shouldn't we bake it at 350 for 20 minutes or something, then broil?
