mey, ---As a fellow member of the Shrimp Community, it was a shame to see you squeeze the tails off those shrimp. Yes, while the dish demands blind-bite-ability, and the cleaning of the shrimp allows you to dig through the dish unhindered, a true zealot of the community crunches through tails unfazed. High in keratin, shrimp tails turn your fingernails to steel, and signals to all those watching you consume that you mean business. Mey, I thought we were in this Shrimp Game together. To see you peel those Shrimp truly made me question your devotion to the community. Reflect on yourself; where do your sea-food allegiances lie. How could you deny yourself the variations in texture, and disrespect the shrimp by not crunching through his exoskeleton like a true carnivore. To the entire Shrimp Community, we must demand more of our figureheads. ---p. s. the sweater game always on lock. ---Your friend, -A devout member of the S. C.

Ok, I lied. its don't take concentration or much attention. I make fabulous grits! My family from way way back, 1800's even, lived west of Jacksonville and they, my grandmother actually 1900-2000, taught me about grits. Water n time is what it takes, patience and ingredients is the other half of good grits. You get your ratio right, start out with a good measure of salt, grits need salt and time to soak up that stuff and then a good measure of better at the end. BOOM! Done! And, if u like my grandmother and had that stuff with some bacon, pour little that on there too for damn good added flavor.

I've never had sauce on my shrimp and grits especially not with Worcestershire which very distinct in flavor and made for steak. I just make cajun seasoning or cayenne salt butter sauce sometimes with a vegetable powder. The grits stay creamy as long as it's consistently stirred. You can use water but it's not the same as adding a creamy component.

Here in Denmark we a local dish that also requires constant attention. Rice porridge. It's a Christmas dish usually served with melted butter on it and cinnamon mixed with sugar drizzled on top. The reason you have to watch it that it, like grits, burns to the bottom of the pan really easily.
