I am not sure how things work out in NYC. So my experience of working in Canadian restaurants might be some kind of reference why this chief could not really -have time- to master English. So you see, just like other types of cuisine, Chinese-style restaurant is no easy job. For a master chef like the one in the video, he will most likely work for more than 10 hr a day with perhaps only two days off in a month. (I once worked as fry cooks for a hot pot restaurant. My shift was 1pm-11pm. While the head chief works from 9am-7pm with only two days off in a month )Due to the quality control and time-consuming nature of food processing, high-level chefs might need to come to the restaurant most of the time. That's just how the business runs these days. Let's not forget he perhaps sacrifice all his own time and leisure for his families to have a better life and more free time to enjoy cultural activities and better education (thus being able to speak much better English.

I worked 10 years in a cantonese kitchen so seeing the staff luagh at him while cooking i can understand that. Cooking in a asisn kitchen is extremely different than any other. Cooking on a wok using your legs to turn on the fire and off using your arms and making things within seconds so yrah it was hilarious to see him try lol

Man, I love Dim Sum. has some Sunday. I have never wanted to goto, or been to, NYC, and I grew up un upstate NY. but I want to visit that restaurant! Living in Florida, we have a large variety of nationalities here as well. and have some great Chinese, Latin American, Caribbean and other foods here.

This one came out really well. Being a Cantonese-Brooklynite and spending my whole life around Sunset Park, Bay Ridge and Bensonhurst, it had some personal weight for me too. I was interested in seeing how these different worlds I lived around would interact. Frank is awesome as usual.

Frank comes from a family cook and great cooks often and eager to learn from different idea and perspective. Dim Sum is all about having a meal with friends and family member gather on a table and enjoy the food and conversation on daily life. This is what life is about.

The fact that this type of food is considered -cheap- and an Italian place can charge -35 for a plate of pasta. This is incredibly nuanced and delicious food and it seems like a crime that its not at the forefront. --There David Chang rant over haha

i like this guy. very respectful. pizza making however doesn't come close to the complexities of making dim sum of which there are endless varieties. they didn't show him marking the bill so maybe he gave all that food to the customers for free. lol

Doesn-t matter whether you-re the head chef or wash dishes at a restaurant, Frank has the same level of respect for every person. Watching him is seriously humbling, he-s such a genuine person and it seems like everyone he meets enjoys his presence.

Dude. I'm not a chef, but as a homecook, a wok shouldn't be strong armed like how he is doing it. The trick is in the sliding motion. There's a reason the stoves are made in a pit like structure for it to be sturdy enough for the weight of the wok.

Jing Fong and Dim Sum Palace are my favorite places to get dim sum in NYC. I usually go to Queens for Chinese food because of the variety of restaurants and dessert places that they have, but I'm happy these two places are in Manhattan.
