Isaac Toups is back in the MUNCHIES Test Kitchen and today he-s making boudin balls, a classic Cajun dish made of pork shoulder, chicken liver, rice, seasonings, and the Cajun trinity of onions, bell peppers, and celery. For extra flavor, Isaac uses beer to deglaze the pork and adds 90 cloves of garlic. Yes, you read that correctly: 90 cloves of garlic. Rice was used historically in this dish to extend the filling in order to feed more people, but Isaac keeps it in for tradition, flavor, and texture. Though the filling can go into sausage casings, Isaac fries it into boudin balls for a flavor-packed snack

Started yesterday, with shopping list, and cooking down 5 Lb. 's of chicken quarters, w/bay (of course) and Trinity, for that extra kick. With the chicken Broth set, had to deal with the damned 10. 27 Lb. Pork Butt. I am a Professional Wood Butcher, and with the bone, I did 'butcher that fat butt'. EMT said finger basket, but all was reattached, minus the finger my lazy Dog et. Now, back to the Licker Store, for 3 or 30 beers, to continue. I must say that while pounding the garlic, my table collapsed, I got stabbed 3 times in the process. My Lawyer, I found out later, proclaims that you saved his marriage with your cooking antics. Thus, He called Planned Parenthood to abort me. With locked doors, hope this shit works out.

Gotta love this recipe but holy moly how labor intensive can ya get man? Grinder? What grinder? Ain't nobody in New Orleans gots a grinder. Gotta be sensitive wit da balls? Dey might fall apart? What up wit dat? I might need boudin ball sensitivity training. Dis gettin' way too complicated Mista Toups. I'm just gonna pick up my boudin balls from the local gas station. Always crunchy and always fresh. I will say that I do indeed enjoy Mista Toups food videos. I tend to sip on a couple of bottles of cold beer when I cook too (and when I watch the vids. Just makes the process a little more interesting. Buzz out!

Yall should do a how to on how to make kolache-s! I think there actually a german food normally made with fruit but growing up in the south texas dunkin donuts and shipleys used to make them all the time i love the ones especially with the jalapeno and cheese and sausage --- but they also do one with sausage bacon egg n cheese since thats a huge staple breakfast food in nyc -

Since New Orleans has so many cases of Covid-19, Isaac toups has now started making, delivering and even sometimes giving away food to people who are in need. He-s a stand up guy. Please go follow him on Instagram or buy his merch. He really deserves it.

I can't wait to try this recipe! My wife is from Louisiana (her daddy is from Bunkie. real Cajun. She misses boudain balls something fierce. I didn't hear you say how long to fry them and at what temp is your oil? Thanks in advance. Love your vids!

So glad you made this video Issac you're the man. I'm a Yankee from Idaho and I worked in Louisiana in the oil fields and fell in love with Boudin while I was down there. Worked outside of Shreveport in a small town called Mansfield

It's hilarious that people get weird when they hear Boston Butt, because they think it's a pigs ass instead of the shoulder. When those same people do not realize that a pig's ass is actually ham, something they eat all the time.

Thanks for the very good video on making my favorite food of all time. Now I can make it myself instead of buying it cold at the grocery store in Dallas. They don't know nuthin about that up here---makin it fresh.

As a guy born in raised in Lake Charles in SW Louisiana this is the most accurate Boudin recipe that I have ever seen. I expected that considering Isaac is making but none the less an amazing recipe.

Mister Toups just wanted to say everything I seen you make one here looks delicious and reminds me of home while I'm deployed over seas can't wait to go home and have some good ol Cajun food
