Chef Ohm Suansilphong from Fish Cheeks in NYC makes a warming hot and sour Thai soup, Tom Yum. This soup begins with a lemongrass broth, fortified with shrimp heads and lime leaves, that then gets seasoned with fish sauce, chili jam, cream, and more. It s served with vermicelli noodles and shrimp, resulting in a sweet, sour, savory, and spicy seafood soup that hits all of the right notes. Noah: In modern Thai, there are two types or styles of Tom Yum: Nam Sai (clear broth) and Nam Khon (thick broth)
In the US and abroad most Thai restaurant sell some sort of thick broth because it s more palatable to western palette.
But traditionally Tom Yum is really clear and runny or you could say light soup.
So thick version, whether by milk (or half-and-half) or coconut milk, is essentially modern form of Tom Yum soup.
