Chef Jos Gonz lez of Restaurante Al Mercat is whipping up a Costa Rican dessert staple: platanitos con natilla, or sweet plantains with custard. Chef Jos makes this dish family-style by frying ripe plantains in their skins and creating a luscious custard with condensed and evaporated milk. He takes the dish a step further by enhancing the flavors with brown sugar, salt, ginger, and tops the dish off with fresh cacao nibs and shreds of dark chocolate.
Astrid: Idk if this is because of regional cooking styles or what but I'm from the GAM and I've never eaten sweet plantains like this, this is a new takeaway for me.
