Munchies Guide to Summer: Homemade Sriracha: After working at Masa and then under his master Chef Masato Shimizu at 15 East, Chef Daley spent time in Japan making connections at Tsukiji Market-the world's largest fish market-and learning as much as possible about the craft. As a result, the dining experience he has crafted at New York Sushi Ko is both intimate and unique: When Chef Daley makes sushi for his patrons, his personality is just as important as the food

If anyone wants to know the joke he mentioned about the -Horse- and my -dick is bigger than yours-. It goes like this. A king had a prized horse who went into massive depression. The king summoned three people to help him solve this problem. One person was a priest, the other was a Vet, and the third was a black jester. Each of the three went into the stable alone to cure the horse respectively. The priest and the vet both failed, however the jester succeeded leaving the horse laughing. The king was curious and wanted to hear what the jester did exactly, but the black jester refused to tell him. Several months passed and the King was now pissed of that the Horse keeps laughing. He called the same three again. Again the priest and vet both failed, and again the jester succeeded shutting up the Horse. Now the King demanded the jester to tell him his secret. The black jester explained -The first time i went in I told the horse that my dick is bigger than his, the second time I went in I showed him my dick'.

Umami is tastiness or deliciousness. Umai means delicious or tasty in Japanese. Umami is what causes food to be Umai. So, it's tastiness or deliciousness. It's an over-hyped Japanese word by some Japanese chefs in America to market their restaurants/brand. If something is delicious/tasty, it has Umami that causes tastiness or deliciousness. It's not unique to Japanese food at all. MSG (mono-sodium glutamate) is invented to artificially add Umami/tastiness to food.

-Umami isn't a flavor, it's the unnamable. [. ] it's what every chef should quest for in every bite of their food--A bit of an annoying quite. don't try to tell me that any dish can be umami. Most desserts for example. -We all know umami = a kind of meaty flavor.

You this guy is bs when he said he tasted umami and said umami isn-t a flavor when the Japanese have worked for years that it is a flavor. So he experienced umami but umami is a flavor and not an experience

I don't know. Umami seems like it's an actual taste that can be quantified and observed in a controlled environment. The chef sounds like he's sensationalizing umami. I could be wrong.

If any 'aspiring' chef blurts our 'dick' comments like I lose my fkin appetite. -Anyone can get a training from a sushi chef 'master' but not the talent. -This chef is a piece of joke

Sounds like if Archer (or John H Benjamin) thought he was a sushi chef instead of Burger joint owner when he lost his memory. Definitely hitting this place up if I'm in NYC.
