That looks great, but a better quality homegrown heirloom tomato would make a lot of difference. I don't care for those by the looks, but maybe if you braised or broiled them a bit first they would be better (I think so) - in the absence of having really good ones.

Well my mom told us kids before you do anything to Egg-plant is to soak it for an hour in a salty brine to remove the Tannic acid that has a bitterness to eggplant, i tryed it your way and its bitter, So i tryed it my moms way and its better.

Ass end of the eggplant LOLz. Seriously though, this looks superb. And my husbands thinks he doesn't like eggplant, so I need to work on fixing that.
