I like to use what I have in the fridge, and that doesnt mean I used old eggs.
INGREDIENTS:
1 tablespoon butter
2 eggs
Kosher salt & fresh ground pepper to taste
1 tablespoon fresh curly parsley, finely chopped
1 tablespoon fresh dill, finely chopped
1 tablespoon green onions, finely chopped
1 - 2 tablespoons shredded Monterey Jack cheese

Hollis: this is going to be the base for a burrito with: Pepper Jack, guacamole, pico de gallo, sour cream, Sharp Cheddar, hot canned chili (no beans) or just stewed (dried or canned) beans, cilantro, green onions, lime. i just got my new reversible grill/griddle (on sale, incl. sammy press, and ill throw this on to melt the cheese and heat it up a bit. thanks so much for the inspiration.
