This is my favorite video y'all have ever done. Sam, you did a good job. The hardest part is trimming the fat just right. Glad you chose the butcher paper instead of foil. Foil can make the fat gummy. Remember cook it fat side down and then after you wrap it keep it fat side up so you don't lose your bark.

I dont know what I think about this episode. I love how it looks when it was finished, but I didn't get the same satisfaction as if the episode is normal. I prefer to see the cooked meat at the end as a reward.
