Bean, Carrot & Tomato Harvest! Garden Answer J. : I know this is last years video but I still wanted to give you these tomato notes to help you ripen the green tomatoes that are still on the vine. Enjoy.
Harvesting instructions for my personal zone 8b Aurora, Oregon but can be formulated for your zone too. Using Oct 21st as a general first frost date. The next step is to subtract 6 to 8 weeks from that date to start taking steps to speed up the ripening of your tomatoes. I started implementing this strategy on August 10th of 2020 to see if it really works. It is a game changer.
Remove all tomatoes that are about half way done turning color and finish ripening them on the windowsill (about 3 to 5 days) This will help prevent cracking and also allow the plant to focus the energy on ripening the next tomato.
Cut the actively growing top off your indeterminate tomato plants 6 to 8 inches above the last fruit truss. That will redirect the energy from growth to ripening the existing tomatoes.
Cut all flowers off knowing those flowers will never grow to a ripe fruit. This will also alleviate useless energy loss for the plant.
Remove all fruit that is too small to ripen on time.
Remove leaves below the lowest fruiting truss and all yellowing or diseased leaves as well.
When removing the last tomato from the branch, remove the branch as close to the main stem as possible to keep the plant from wasting energy on a fruitless branch.
Stress plant by twisting the stem at root level gently until you hear a few crackles. You do not want to damage the root system just panic the plant to believe that it must ripen fruit before it dies( I wont be trying this one)
Cut back water by 50% to panic the tomato to ripen the fruit quickly. The tomatoes will have a richer flavor because of less water as well.
Spray with 600 mg uncoated aspirin per 1 gallon of water on the tomato plants. It makes them think theyre being attacked but it doesnt hurt the plant in fact it helps the plant to strengthen up and build a stronger immune system. (I dont bother with this step either)
When the weather starts to cool down, cover the plants with fleece to keep the frost off the plants. It might extend your season by 2 weeks.
Remove fruit before damage and ripen indoors (not in the frig. Some people have become so good at this method that they brag of eating ripe tomatoes at Christmas dinner.
When all else fails and you dont want to give up on the green tomatoes, look up the many recipes that use them well. Such as fried green tomatoes, green tomato salsa verde, green tomato and bell pepper relish, fermented green tomatoes and Green Tomato Cake.
I read an article where a man learned to keep his ripe tomatoes from rotting for up to 6 months by storing them in a box of ash.

One thing you could try with your raised bed you grow the carrots in, is, to add a good wheelbarrow full of sand. It may sound strange, but where we used to live on the West Coast of New Zealand, there was alot of black sand. The gardeners whose gardens had alot of sand mixed in their soil, could grow the most amazing carrots, because the sand allowed the carrots to develop a good straight root. The sandy soil also held the heat very well. Kumara or Sweet potato as you call it, also enjoyed the more loose sandy soil. Potatoes and watermelons also grew in abundance.

This is a HUGE garden project! Do you actually eat EVERYTHING here in a year? You must have a very large family because I dont understand how this could possibly be all eaten for a family of 3. I was raised on a dairy farm and we had a large garden every year but NOTHING the size of all this! We were a family of 6 so I dont understand where all your food is going?

Here in the philippines we call that bean sitaw (string beans) can be cooked with Adobong sitaw with pork or chicken and tofu. First fry the tofu cut into cubes. Then set aside first. Saute garlic, onion, sliced meat, then add the beans, Soy sauce, oyster sauce, pepper, a little bit of sugar, then a cup of water. Wait for it to soften. Then it can be served

You have such a vast amount of fresh produce on your property. I wonder how you take care of all of it? You may consider buying a Harvestright Freeze dryer. It could preserve your food for up to 25 years. We own the company. It's the only in home freeze dryer in the country.

You have inspired me to grow tomatos this year. I usually grow them each year. But had so much trouble with them last year that I just had enough.
Tomatos are my favourite food. If I had that many tomatos I'd make pasta sauces and save a small amount for salads.

How did you know when to harvest? My carrots are still very green and about 18 inches tall but the carrot is not breaking the surface. The seeds went into the ground first week of July.
