Dill pickles canned, Jenkins with the baby cucumbers, pickled onions, grapple juice, & grapple sauce, & butter.
My sister does the pickled beets, alone with the jams.
I make the 3 kinds of oranges marmalade. Navel oranges, clemetimes, & mandarin oranges. Mixing those 3 kinds of oranges together, makes a great marmalade. I even use Splenda sugar, 1/4 cup for 1 cup of regular sugar. Wow what a great combination.
My next project is zucchini & cucumber mixed sweet green relish, alongside regular sweet green number relish, & zucchini relish.
Then getting the tomatoes from my Sister 's garden. Making stewed tomatoes, tomato paste, tomato sauce, salsa(mild, & thick.
Corn relish, pineapple salsa for using with fish, & pork chops. Might even try apricot salsa this year. Found a recipe that sounds good.
Canned pumpkin, make it with just cinnamon, & nutmeg. Can't use the ginger cause of deadly allergy. So make my baking goods without it.
The peppers I use some in my canning, the rest & cut up & freeze, & just take out what I need for each meal, then put the rest back in the freezer. That way you can keep the peppers longers. I make 3 different batches. One with the green peppers, one with the green pepoers, & then make a mixed peppers mixture when I freeze them. Just make a bunch of little freezer bags, of the peppers, & freeze. Say about 1-2 cups of peppers per bags.
I even use the cut up orange peels, & freeze it in small batches, for using in baking. Or shred them & stick in ice trays, then freeze with a little bit of water. Take them out with amount you would need for say citrus muffins, or chocolate & shredded orange peel cake or muffins. My Mom makes a beet salad with pickled beets, celery cut up fine, along with an apple, & Miracle Whip, delicious.
If you like beet soup or bortch. It is delicious. With the beets, best tops, carrots, onions, cut up fine, you can even add spinach, or kale cut up. But you need to start with either bone broth, beef broth, or vegetable broth. Then add your vegetables & tops of the vegetables. Add some Clubhouse Italian Seasoning with red lid only contains dehydrated vegetable peppers instead, of pepper spices. Which I can't have either. Add some onion powder, or salt, garlic powder or salt, a bay leaf. But the bay leaf needs to come out before serving.
When everything is cooked, add your milk, with a little corn starch, to make it a little thicker. Cooking it a a little longer until it is a little thicker.
Add a little bit of sour cream when serve it.

My Sweetness Bi-Color corn only got to about six feet also here in the Seattle area. However, it was very healthy and prolific and most stalks gave two ears of nice sized corn cobs. But I did learn I need to succession plant a little because there was very little pollen left for the later ears, so I will have to maybe plant half initially, then another row a week later and another row the following week. I don't know how else to fix that pollination issue. It was delicious though! I planted intensely in a 4x4 block. If anyone has any other ideas, let me know.

Side note: In my experience zucchini is very good to eat raw or cooked when it's pretty small and tender. I pick mine when they are medium green and shiny! The huge dark dark green ones are not too good for cooking. Just wondering why you don't pick them earlier so you can enjoy them for eating in salads and cassaroles instead of feeding to chickens? Love your videos! Thank you

So funny. When we grew beans we were always amazed because it didnt look like there were very many until we started picking. Then when we were done and looked back at the plants there were always some we had missed. Cant have a garden where we live now so Im enjoying watching your garden grow!

Use those oversized cukes. Remove the seeds and do a caribbean relish/salsa with thinly sliced cukes, chopped red onion, lemon, parsley, sweet or hot pepper and salt. Add cherry tomatoes if you like. Use like salsa. Great way to enhance pork or any meat.

I'm a new veggie gardener and I still can't quite tell for sure when my root veggies are ready to pick. So if I pull them out of the ground and they're tiny or not ready, can you stick them back in the ground for a little longer?

You should do an overview video of how you process the various crops. I struggle with storing things as it seems like everything gets soft shortly after bringing it in so it would be nice to see how you store your massive harvests.

I loved seeing everything that you harvested. wow! We tend to use the zucchinis that are too big to eat to make zucchini relish or marmalade, however I'm sure that your chickens are going to really enjoy them.

I have a patio garden only. is it possible to grow the Persian Carrots in a container? They look short enough that they might be a good option, but appreciate advice. Spectacular harvest, thanks for sharing
