The next Beaver you get (4 legged variety) try another favorite of mine. -Beaver McNuggets-! Cut the meat into bite size nuggets (Unless you prefer the Beaver Strips instead, Place in Beer Batter or your favorite coating and then Deep Fry in FRESH light vegetable oil. Follow the temperature and timing recommendations for your particular cooker. I prefer my Lodge 8 Qt Dutch oven with fresh light corn oil - 350 degrees for about 3-5 minutes, internal temp 165 degrees. You may have to adjust your time or temp a bit, try doing a few at a time until you're happy with the results. Just an idea-kind of -Food for thought-, so to speak. Don't forget your favorite dipping sauce! I like BBQ!

Back in the early 70's, I attended a USAF SERE school (POW Survival and Evasion, and after slogging through the mountains north of Spokane, Washington for a week, eating grubs, worms, and cockroaches (I have a nice recipe for cockroach tea if anyone's interested, one of the students caught a beaver and we cooked (boiled, actually) that thing in an old trash can we found. And let me tell, you, no beaver EVER tasted so sweet.

I can't believe how many times that Beaver swam under the trap and got out and walked around it. It's like they knew it was a trap the whole time.
