In today's Stuart Florida fishing video, we are deep sea fishing on our center console. We start the day catching live bait and started bottom fishing; the first fish I hooked was a monster jack crevalle using the Zeppelin, a shark deterrent magnet! We catch an amberjack that almost got eaten by a shark. They we anchor up in a ripping current and catch a couple quality mutton snappers!

I don t know if you have the option down south, but if you bleed your fish and ice them, let them sit on ice overnight so they go through rigor mortise. It s a chemical process that commercial fishermen are familiar with. The muscles will relax and will not be so stiff and the meat will be firm and even better!
To remove the pin bones AND the dark meat song the blood line, lay your knife on its side and cut under the dark meat at a slight angle that ends at the pin ones. After you slice both sides, grab the dark meat ant tug it out, it will cleanly separate.
