I appreciate the fishing and the luck you had on the day you went out, but think a little more about the cooking. You have the best fish. You filleted that fish. What did you do with the rest of the body and head? Why did you not make a fish stock when you had the perfect ingredients? You instead degraded the plate with boxed chicken stock. Oh my goodness. What a shame. As far as what you call fresh mozarella, when you're in florida, please take the time to visit something other than Publix or WinDixie for groceries. I can give you a list of high quality farmers' markets and actual locally made mozarella. You have a good thing going. Don't degrade the quality by skimping on the ingredients. Definitely keep going.

Plate looks good, next time keep the fish head and bones & make your own stock for the noodle. You could use the head and belly meat for fish cakes!
