I think ive watched close to half you videos in the last week and they are awesome. I do jave a question when you get hair or fur on the meat do you wash it of or do you burn it off then wash it? Throwing away so much of the bird bothers me. I've plucked some, but that's so much work, and the skin tears easily. I wrote a book about cooking pheasant. While there is no single right way, this meat has so little fat in it that it makes sense to cook pheasant in some hot liquid.

I skin it and cut it i to pieces. no plucking, no gutting. love the foot technique, going to try it. Cooking. stew or potjie, or thai curry or coq au vin or sliced thin and pan fried with chillies and ginger.

Lovely video brother, but one thing I don't understand is why do you guys throw away the whole bird and take only the breast parts. ? Don't you feel like wasting the other parts of the bird?

The pheasant meat is wonderful. That guy is using just the breast. It's a shame to throw away the legs and the wings!
