The majority of brazilians don't stir so much, she is doing the right way if you want to look pretty, but when you don't stir there will be some caramelized harder pieces that we think is delicious haha. Also we eat a lot directly from the pan(with sprinkles on top if we have it, we only do the balls if it is for a party or something like that.

Wow, that looks delicious! Never thought condensed milk is used in Brazilian cuisine, I was sure its only Eastern European and post soviet kinda theme. Here in Russia we love to boil a can of condensed milk a couple of hours so it gets even more tasty!

If you come to Fortaleza, try Brigadeiro from Balu doces. The traditional one. It has the better tast and texture I know. It's sticky, not very sweet, so dark it's a little bitter. Maybe they use some coffee. I'm sure you never forget this one.

Optional Pinch of Salt Yes. To me in many recipes, salt and chocolate complement extremely well. _Excellent recipe and demo. _ This was super enjoyable.

Another tip: you can use the brigadeiro as syrup to anything (most commom here to cakes) and flavor too. Give a try.

Oh my, Im a Brazilian living in Canada for almost eight years and just never discovered how to do it with the Canadian ingredients and tools. You just gave me lots of ideas, thank you!

I bet you could use a small cookie scoop to scoop the chocolate mixture into a ball and then roll that in the sprinkles. Maybe it wouldnt be as messy and easier to roll?

Many of us (Brazilian) eat straight from the pan! It's good to share it with your partner, family or friends. Everyone gets one spoon and that's it! No need to roll them.

If you have to reheat: Reheat in a double boiler with a pot with boiling water and the chocolate in a bowl sitting on top of the pot.
