Brad, you asked what could/should be fermenting. Any spring veggies are fair game, asparagus, scallions, radishes and cabbage is always a welcoming ferment to me. Just as you did these onions, maybe do a traditional recipe for batch #1 and a rogue recipe for batch #2. Stay safe and sane brother, keep on cooking and creating!

Funny thing, I placed some onions in some of the brine of a pickle jar that I had just finished off, looking forward to how they turn out. I've never been a fan of sweet pickles or anything, so hopefully these sour onions turn out good. :)

It s pronounced Zah Tar. It s toasted marjoram, sesame seeds and salt. Marjoram is a Mediterranean herb in the same family as oregano. If you can t find zatar or are just in a pinch; Spanish oregano is the closest facsimile.

I love all the graphics on this episode, it felt more like a classic It's Alive. Recently some of the episodes have felt graphic-light (which I assume is due to the workload.

I like to pickle red onions with garlic, ginger, and diced fresh Thai chili s with rice wine vinegar! The vinegar alone after several days is hard to resist drinking by itself!

Idea that seems up Brad's alley and relates to what's happening: I've heard people are making their own yeast with the shortage. Might be something Brad would be into?

Gotta say, I love this show, but not a huge fan of all the sound effects. It would funny if it was just a few, but they're used so liberally that it's a bit overkill.

My parent's go to fermentation these days include Keffir, pineapple vinegar (with a mother that's been around for a while, and the odd cheese or picked onions like these.
