Presented by Bright Cellars Join Chris Morocco in his home test kitchen as he makes red wine and soy-braised short ribs. These richly flavored ribs are a riff on kalbi jjim, a traditional special-occasion dish. Red wine adds depth and complements the soy and mirin. Jay: Sure, kids are lovely and Chris is amazing, but WHERE'S THE MONEYSHOT? The Picture Perfect shot of the dish? The magazine cover? I wanted to see the plated final result! aaarrgghhh now I'm going to have to prepare this dish JUST so I can take a picture of the plated food! (and to eat it all by myself)

I'm both impressed and a bit stunned over the calm and passive-agressive thing Chirs got going with the kids here. I like to bark/scream. And I never do passive-agressive, because. Well, my kids dont get that. The like to run. And scream. LOVE this new thing with all the kids! And I LOVED when Brad L just told his kids to get lost, because you could hear the love and the kids new that. So, its not the actual words, its the undertone.

It was fun to see the egg ribbons however they look twice as wide as in authentic Korean cuisine. So when you make them yourself, go for about 1mm by 6-8 inches. Koreans seem to prefer soju/shoju with just about everything. And beer, lots and lots of beer. Wine is widely available but I ve never witnessed anyone drinking it in restaurants let alone with braised ribs or anything else for that matter.

It's really funny watching Chris with his kids. Their personalities are so opposite of his. Brad's and Carla's kids seem like how you'd expect them to be--very much like their parents, but that's definitely not the case with Chris.

Seeing Chris's bookshelf of cook books, makes me think you need an episode where everybody talks about a few of their favorite ones or go-tos. They can be basic or fancy, it doesn't matter, I want to know what everybody has!

If YOU think its brown enough. leave it for another minute. You just KNOW Chris is one of those I'm not angry, just disappointed. mofos. I bet he throws and I am sad you thought you couldn't come to me. on top!

Flanken style for me and my butcher has always had more than one bone connected with only about a quarter-half inch thickness. I think those are just regular cut ribs. Is there more to Flanken style than I knew!

It's become clear to me that the BA Test Kitchen is Chris's man cave. That's where he can hang out with his buds, listen to his fave music and keep up with his hobby of hanging out in the background.

Apple juice cheers is GENIUS because it lets them act like a grown up and gives them a polite role to play while still making it feel their choice to participate!
