One of the most valuable lessons I've learned as a visually impaired chef, is to taste everything. You can almost always get the same results if you know how something taste.

I can live off raw seaweed as long as I have a bottle of chojang, gochujang+vinegar+sugar. No one does seaweed like Korean cuisine.
