At Cosme, Daniela Soto-Innes serves a carnitas dish that costs as much as a porterhouse steak. But this is no ordinary version of the Mexican classic; rather than the traditional pork shoulder (a relatively cheap cut of meat, Soto-Innes uses a a rare and expensive breed of duck to fabricate a unique incarnation of the dish. Watch the video above to see how the lengthy process that includes plenty of duck fat and a little Mexican Coke to boot, turns ducks into tacos

Nick, I've been watching your show for around half a year and I've loved your personality that you show to me and the rest of your fans. But I found out that you were once part of a white supremacist group. I've only found this out by a hater and I know you might be in pain from me just mentioning this but, I just want you to know that your fans and I will still support you even if we know of your past.

At 2: 39 (timestamp) you said that duck has more of a red meat flavor - more than any other fowl or poultry. Let's not forget Ostrich. I don't think most people could tell the difference between a Fan Filet and a Filet Mignon grilled on your backyard Weber.

A lot of people complain about the price, but if the dish was Italian or french nobody would say anything. They think that because it's mexican, everything has to be cheap. Mexico also has sophisticated dishes, not everything is tacos and burritos.

i dont like going to restaurants, portions are 2x as big as what i eat and it costs atleast twice if i made it at home, so im paying 4x the price and i have to still drive to the restaurant, why would that be any fun

Sucker bait for hipsters who know nothing about food. You can get a whole Peking duck from a first-rate Chinese deli for 15. 00. Regardless of what is put into tacos, they're nothing but Mexican street food.

The final result looks amazing, but I threw up a little when I saw the innards being pulled out after most of the cooking process was done, especially since it came out of its own melted fat.

Everyone over here talking about the price point coming from the extensive 4 day process? Um no it's very common for meats to undergo extreme processes before being consumed. at a way lower price.

He might do some credible reviews but can't support him pushing the food culture to 89 tacos. It's not that crazy of a dish at all. What's next a 200 roast chicken from the supermarket?

Pricey (to me, but looks absolutely delicious. Could probably replicate this process at home for cheaper. May actually try it. I'm itching to eat some duck!

Go to any Chinese BBQ place, grab a Peking Duck, grab some tortillas, slice up some onion. Saved you 60 and I bet you it's better then what Nick ate.
