I've tried a few of the tricks that involve boiling or precooking your fries and I've tried starch slurries but I never thought to combine them, this oughta be fun. Okay done, they turned out way too salty but the crunch and texture were amazing. I'm really curious about the purpose of the bag though. The bottom ended up congealing into a blob of jelly and separating the soft potatoes back into individual fries was a bit ridiculous. Anyone try anything similar without the bag? I feel like i'd get a more uniform result cooking this mixture directly in the pan, where the rolling boil and occasional stirring would end up with a more even coating. Guess I'll be eating fry experiments for the next few days.

I wish I could tell him to clip the handle into the basket on his deep fryer. I have the same one and find tipping out stuff super awkward. Found out you could clip it one night accidentally by washing it. Just squeeze in the bits of metal coming out of the handle and clip them into the bits of metal on the basket. So simple but when you see it it's like omfg. Actually LoLing. Sooooooooo want the breville polyscience hot plate.

I make fries at home all the time and I honestly think Cliffords fries were some of the best fries I have ever made. It does take some prep time, but some of the best things in life you have to work for. Just as stated in the video, the fries were very crispy on the outside, but the inside was soft and perfectly done. I will definitely be making these again.

I used to do all this but I've found that if you just want simple, yet good french fries that taste similar to In n Out, all you have to do is cut the fries, rinse them until the water is clear, and double fry. Everything else (with the exception of soaking them in a flavored brine) has diminishing returns.

I have an easier way to make crunchy French fries. So cut your potato into fries salt them and fry them. When the fries are cooked through take them out and leave them to rest. When its cold Fry them agin then you will see it getting golden brown take them out and eat away with you crunchy fries!

The more important part is pre-heating/cooking (like par-boiling) the french fries (and letting them dry before deep frying. Vinegar works well too. Add a bit of salt and a bit of vinegar and it works great, even without the bag (granted the bag is a great idea since then it's not as wasteful.

Followed the recipe to a T. Turned out absolutely awful, the potatoes didn't even crisp up whatsoever. The only difference was that I used an induction cooktop with a cast iron pan, the bag(I used the EXACT SAME ONE YOU DID) BROKE. So upset. This just turned into complete mush.

No matter what the packaging on your bags say. I would never put hot anything in plastic - not even hard plastic - because it loosens the particles from the plastic surface and youll have all the nasty chemicals used when producing plastic in your food.
