At Di An Di, the chefs and cooks come from many diverse backgrounds to make some of New York City s best Vietnamese food, including, ph g, ch gi, hake filets, and more. SUSTAINABLE: Not fine Japanese restaurants use fish-power as he says it is a fish sauce. Fish-sauce is something you extract from raw ingredients. And he seems not particularly picky about chicken themselves, that is already out of questions as they are many kinds of different chickens. This kind of Asian restaurants may not survive in japan

Hanoi? . How I like it? Watch how you speak! But you all speak this way! Ok. Great cooking, really nice. Exciting! Beautiful food, clean, savory. Perfection. Hello Jimmy.
Viva Vietnam! Yes, 'banana leaves', wonderful, all wonderful. Garlic, garlic, garlic. Yummmmmm

This Chef is a True Leader by definition. He leads by example, works closely with his team. I'm very impressed by the R&D concept. People like Gordon Ramsay should learn from him how to treat the fellow cooking team members.

The garlic pasta with the Vietnamese ingredients is uuuhhh no. No I wouldn t say those are. Miso? Lobster? Semolina pasta? The only thing is chicken stock. Just say it s not even closely related to Vietnamese food.

This chef is clearly a rebel. Any way he can get away from cooking Vietnamese home cooking he'll do. Hats off, there's no way he doesn't get a lot of crap for it.

Vietnamese food is technique and technique, if you miss a step you might get a frying pan come flying at your head. You can be creative, but it has to make sense.

This is the whitest viet guy I have ever seen. I would bet my house that his wife is white. The way he pronounces the dishes is actually hilarious
