I think if you had plunged the veg into an ice bath after blanching they would have retained their texture and color. OR you could have spread them out on a baking tray to cool a bit before composing the salad. Dumping a lot of hot veggies into a bowl right out of the blanching water just turns them to mush.

I think this would have been better if you went the extra step. Do what Binging with Babish does, if the recipe sucks, fix it, or show what you would have done instead. The video comes off as just negative, and doesnt really have a point, ur just cooking/eating nasty food.

Wow never seen so many sensitive snowflakes complaining about a word on a hat they couldn't correctly read in the first place + a guy following a recipe that he ended up not liking. Thanks for the laughs guys also, will def be checking out this cookbook!

My mom used to do that to cabbage as well - blanch it for Coleslaw. I had to put a stop to that barbaric technique. Is this supposed to be Japanese inspired? I dont remember this recipe in any Japanese cookbook.
