For me, pizza is music. Franko: I live and do pizzas in Italy. He is pretty good, better than most pizzaiolos in Italy on average. But he needs to master a little bit more on two points: the way he stretches the pizza through learning the typical neapolitan slap to stretch the dough and making the dough a little bit more solid and less squishy. Another thing he unfortunately cannot achieve is obtaining fresh mozzarellas: his mozzarellas might be good because they are imported from Italy, but being imported means not fresh. He is right with his own statement, he is good but he has still to learn. But he reached a very good level working on his own and not in Italy.

I get that this is a traditional style or Neapolitan pizza. but it's just so different than what most people eat weekly that I have a hard time saying wow, that looks great. I grew up in IL near chicago, where deep dish pizza is the thing. Mozzarella is the star of the show on that pizza. You get about a half inch to three quarters thick layer of flavorful mozzarella. To me, that's what I look for in a pizza. Sadly you can really only get a pizza with adequate cheese from a privately owned pizza place. All the chains now put about half to a third as much cheese on a pizza as you should.

My God Japan. Stop being so hard on yourself. You are awesome and epitome of hard work and dedication. This gentleman may say he has not achieved the level he wants but for me he made a mark which will never be forgotten. You are a master sir and it will be my great honour to have your delicious pizza some day. I have faith he will achieve the level he wants and I really hope he should. For me it is like witnessing Leonardo Da Vinci pursuing to paint his masterpiece Monalisa.

i'm sorry, but those pizzas really don't look very good. Swimming in oil on the top, topping moving around because of so much liquid, incredibly uneven, almost no toppings. I've had pizza all over NY and Italy and I can honestly say that new york has better pizza. Just because it's neopolitan style doesn't make it good. Pizza literally started off as peasant food. Some traditions should evolve, not be fetishized by teary eyed so-and-so's.

90% of the comments are Americans thinking pizza was invented in New York, making criticisms like its burned or its too wet, or even better, its too old fashioned! The American culinary culture was formed by appropriating dishes from other cultures, butchering them beyond recognition and claiming them as their own. A Japanese who appreciates the Neapolitan traditions creates an authentic pizza, and everyone in the Obese States starts crying.

These pizzas are more along the lines of really oldschool roman bread. If he actually has sun ripend tomatoes and proper basil i would eat the pie no questions asked. But as is? Nah. better go to Naples and get the real thing. The tomatoes makes all the difference. But kudos on the close imitation to the real thing. Not alot of people outside Italy goes through the trouble of learning how its supposed to be made!

I was surprised that tokyo had some good pizza. Some crazy ingredient combinations. You get 4 toppings on 4 sided of the pizza. The problem was i wanted only one topping on the whole pizza. I spent 15 minutes trying to explain and will pay nomal price. The guy look at me like i was crazy. He was like just take the toppings.

My grandpa used to make pizzas all the time, he was italian but living in Brazil. When we went to Tokyo once my whole family cried after tasting the pizzas of this man. We eat pizza all the time, but this one had something nostalgic. Trust me you feel his dedication much as we used to feel my grandpas experience on doing it.

To me, that looks like overpriced crap. I could eat two of those easily. I like thick pizza and a whole lot less crust. yuck. Dominoes pan pizza or Little Cesars Deep Deep Dish are examples of what I consider a good pizza. Matter of fact, going to get one tomorrow.

Italian here, italian looking pizza, good job Boss! but at the end, it looked like you made a pizza for your kidnapped and you were gonna throw sizzling oil on the pizza on his face hahaha that olive oil always is the perfect way to dress your pizza!
