There're many iconic dishes, and beef noodle is only one of them. One reason for making it iconic is because it was invented by Chinese immigrants who came to Taiwan in the 40s and 50s as war refugees, and the taste is a combination of Mainland Chinese style (said to be Sichuan style) and local Taiwanese style. Therefore it represents the unique history of this country. As for other classics, I would definitely recommend braised pork rice (lu rou fan, scallion pancake, and oyster vermicelli. As for sweets, Aiyu jelly in lemonade is a must try. You can't really find it anywhere else in the world.

Im ethnic Taiwanese American from an older generation Taiwanese family, so Goo bah mi (Taiwanese term meaning beef noodle) or niuro mien was not truly a staple food in our daily lies. I always got the sense that beef noodle soup was something that came into Taiwan with the 20th century Chinese immigrants that displaced the previous ruling Japanese government. My parents were of the first generation that experienced the Kuomingtang takeover of Taiwan, and so they werent exposed as much to foods like beef noodlesoup that even were considered foreign by the ethnic Taiwanese like my family.

Taiwanese beef noodles are really just Sichuan beef noodles with a little extra flair. Developed by soldiers who came to Taiwan, it's really just a dish with a lot of fusion in it. Think a casserole but you add inspirations from all over Europe. Ultimately, to make the best beef noodle, you gotta source your products from outside of Taiwan because it is not really a Taiwanese dish. The classic version simply requires too much outside of what Taiwan is able to offer in terms of spices and produces. It's good, but ill be honest, it's not the best in terms of beef noodles.

Beef stew noodle is represents essence of Taiwan. Originally Chinese Nationalist Army soldiers who retired and brought Szechuan spicy soy paste with Beef Stew created the perfect spicy beef broth. Noodle and picked mustard greens completes the dish. Combining traditional Chinese flavor with local Taiwanese ingredients. You have the essence of Taiwan. Chinese tradition with Taiwanese best ingredients.

It's strange to call beef noodle soup Taiwan's signature dish since people earlier on would not dare eat an animal that helped them tend their farms. The reason it tastes so Sichuan style is because the majority of the KMT airforce came from Sichuan and were stationed in Gaoxiong, of course they are going to eat what they consider home cooking.

Ate YongKang on my Taiwan visit and was really disappointed. The broth to me was really bland and under seasoned. I think the problem was the expectation since this place is covered by almost all the food guides and vloggers. Its just a basic bowl of beef noodles that doesnt deserve the reputation is has based on the bowl I had.

I lived in Taiwan for more than 20 years. The Beef Noodle soup was the best I ever had. ANYWHERE. Absolutely delicious. In fact, Taiwan long held the reputation of making the very best Chinese food. in the world. I have no reason to doubt that THAT reputation continues to this day!

Seriously, Iz's videos have such a personal feel to them. It's so engaging and I love the fact that she often includes her kids in her travels and you can tell how open about food they are. Every single travel destination she goes to I end up wanting to go.
