Kielbasa simply means sausage in Polish, it doesn't have to be smoked hard, doesn't have to be horseshoe shape which isn't exactly traditional. In Poland we have hundreds of types of kielbasa, some are smoked, some are boiled. And I understand that in USA over years kielbasa became different but don't talk about traditional polish stuff if you have no idea about it. The two kielbasas you had looks nothing like Polish traditional stuff, if anything out of two A was at least somewhat close looking to our stuff. And last but not least you always try kielbasa without cooking it first, cooking technique would change flavour profile of your sausage and different kind of kielbasa would simply be more suitable for different cooking techniques like boiling, grilling, pan frying etc

Also in the us all chicken is raised with out antibiotics because its a law so dont think thats why its a better buy. When I found out and started seeing it advertised everywhere I felt so lied to. Because its ALL CHICKEN.

The cheaper Bratwurst looked more like Salsiccia to me. I guess in the US people put them in the same category but living right between Germany and Italy I can tell you Bratwurst isn't usually raw or that rough.

As a German i can say that most germans i know hate the very fine bratwurst because it feels not really like meat anymore
