Its always treacherous attempting an iconic, regional specialty like Cincinnati-style chili, especially when youve never actually had the real thing. People are very protective of these types of dishes, and any variance from what they think the recipe should be is met with a visceral condemnation. On the other hand, the food Gods hate a coward, and so I made it anyway

You can buy the Gold Star seasoning packets (as well as a 'Cincinnati-style' brand packet) in grocery stores (in/around Cincy, maybe other areas too. If I was going to make this from scratch (i. e. knew what spices to use, as done here, I would: Puree the onion and garlic-if-added, in a bullet-blender with a bit of water. Then just dump the resulting 'slurry' into the pot with the ground beef, then add a few more cups of water. BTW, it doesn't matter what degree of 'grind' the ground beef has, as long as it's actual ground beef and not beef 'chunks'. what gives the chili/beef the 'fine-grain' texture is simply stirring the ground beef with plenty of water for a few minutes. This 'loosens' it up, while bringing it up to a simmer, or even a boil. Once you have the beef cooked with the fine texture obtained, you can then add your spices, and a bit more water if you want to let it all simmer for a while. I like to simmer it to where it has a nice fine grain and is not too watery, especially if using it as a topping for spaghetti, nachos, fries, hot dogs (i. e. 'coneys', or as taco/burrito filling (really good with a bit of sour cream.

For the standard 3 way, it's the spagetti, chili, and cheese. though there are some places where they swap the cheese with onion. A 4 way adds either beans or onion, the 5 way adds both. There are a few places now that add a 6 and 7 way, with pickled, diced jalapenos and Bacon crumbles as the extra. If you want it as an extreme it's normally adding a spicier cheese than cheddar, at Skyline it's a habanero cheddar. All of them are normally served with oyster crackers with a hot sauce available if you want it. For ordering options, the skyway tends to cost a bit more, but it's adding another 50% of the cheese to it though Skyline periodically has it for free as a special. Extra cheese is another heap of cheese. Inverted puts the cheese under the chili. Semi-Inverted is half under and half on top (My way to order. Dry is normally taking time to drain some of the liquid from the chili, juicy is adding another bit of the liquid. Heavy spagetti is more spagetti and light is less of it. My order tends to be an extreme 5-Way, Juicy, Semi-Inverted, heavy spagetti, and an extra side of cheese as the regular cheddar.

No onions in Cincinnati Style Chili. A 4-Way is chili, cheese & EITHER onion or beans. A 5-Way has both onion and beans. Also, SOME people cut but I assure you that most people twirl. Ive been eating Skyline & Gold Star Chili my whole life and always twirl. In fact, thats one of the reasons those two restaurants offer you a plastic bib when you order a 3-Way. Oyster crackers are served before and its tradition to put a drop of table hot sauce on each one before eating. This is typically done while waiting on your food. Other variants: 3-Way potato - baked potato split & filled w/ chili & cheese Chili cheese fries = fries + chili + cheeseChilito = flour tortilla + chili + cheese. Rolled like a burrito onion or sour cream optional Cheese coney = hot dog on a bun + yellow mustard + onion + chili + cheese. Its quite common to order this plain which means no onion & no mustard sort of like a Whiz without cheesesteak in Philadelphia.

I love this type of chili. My dad is from Cincinnati so we go there occasionally. I dont really like other chilis. We buy cases of chili and send it back home. Its amazing and your chili looks really close to what it actually looks like. I wish I could try your. I actually thing we still have some Skyline chili downstairs. I usually put it over Mac and Cheese. When we are in Ohio I usually get the connies, I think I spelled that right. Its small hot dogs with chili cheese and mustard on it. Edit: There is always liquid/juice at the bottom.

Gold Star and Skyline are the two main Cincy-style chili-chains based in & around Cincy. Empress is another long-standing brand, which did (or still does) have actual dine-in restaurants. Then you got your other local 'mom&pop' chili places around the area; one of the oldest (and best) was/is Camp Washington Chili, which had at least two locations at one point. Really, most any of them are good. Oyster crackers and fresh, finely-chopped onions are a must, to go with it.

I've been to Cincinnati and my Brother was stationed in the FBI in Dayton but covered most of Ohio including Cincinnati but being from South East Louisiana our idea of well seasoned and spicy does not align in the slightest with Ohio tastes. Their Chili is a little under whelming yet I know that thousands sing it's praises. Me, I don't get it but to each his own. Your version seems a bit more flavorful than the Chili I had in Cincinnati and the rest of Ohio.

Proper thickness is tested by seeing if your ladle floats on the chili. If it sinks it's too thin. A four way is beans OR onions. 5 way is beans AND onions. The oyster crackers are for soaking up the liquid left on your plate. You should have sharp cheddar finely shredded and MORE of it Serve on a plate not a bowl. makes it easier to cut. You should look into doing Goeta next. Its a very Cincinnati thing that I've learned to love since moving here. Kinda similar to Scrapple and is a stretch it out food. Locally the chili will be thinner but thats do to them trying to stretch it out. I'll take your thicker version any day. Several of the smaller independent parlors here in Cincy tend to make it a little thicker. Oh and yeah, no where near enough cheese on that: D

Chef JohnIve always been a huge fan but, as a lifelong Skyline aficionado, i am now a mega fan. This is pretty damn close to the real deal. One extra feature is to have 3, 4, or 5 way inverted with extra cheesethat means a layer of cheese both above and below. Regardless, you treated a sacred Cincinnati treasure with deepest care. Thank you. Bonus points for the Icky Woods reference.

You forgot to add the grated chocolate. I do love Mediterranean food but I've always found Cincinnati Chili to be an abomination. It's sweet and I've never liked chili with pasta. Why eat this when you can have a bowl of red chili, by itself, as God intended? I will eat Cincinnati style chili as a hot dog sauce however. It's passable if it accompanied by something delicious.
