Omg wow it's like you read my mind luv love anything with cheese this is something new and interesting to me I've made mozzarella sticks but these I am definitely trying anything with cheese I'm there baby btw I tried your fried cheese egg and it is totally bomb on rye or sourdough toast paired with a salad or even cut up cucumbers and tomatoes thanx for sharing peace

After eating at least 5lbs of the Italianversion I may have convert this to a Mexican version with some choppedjalapeno, kernel corn, and maybe some frozen cream cheese chunks. See what you have done to me. I just can't leave a good thing alone anymore; )

I'm sorry chef John But the amount you consider a lot of mozzarella doesn't even begin to approach what is barely sufficient for me Hahahahaha my version will contain literally as much mozzarella as I can fit into the frying pan, but I love it all the same

As a packers fan chef, ouch. That was clever though; speaking of frying, which oil would you recommend as the healthiest? I recently acquired a dutch oven and am wanting to try frying. I also realize the irony in my question but you know what I mean.

I see you are using a Le Creuset pan. What would you recommend to a beginning chef who doesn't want his dutch oven to double his budget for kitchen equipment? I'm looking at a Lodge and an Amazon Basic which looks exactly like a Lodge.

This is a weird recipe for cheese puffs made with pate a choux, which is much more easily made in a saucepan, using only a wooden spoon. Normally I love Chef John's recipes, but this one not so much. See Julia Child on this one.

Dish looks amazing and ill probably try to amke them at same point but your cadence is giving me a headache. Its like you are bhilding up momentum as you read every line so you start slow and just blaze through the end.

I can make cream puffs but I had no idea you could combined the dough with cheese to create a cheese puff. I think this would be great with pepper jack cheese tossed in too: o) Thanks Chef John
