Chef! My favorite pasta! Story time - years ago when I was in college I became friends with a classmate, he and his mother was an Italian who had immigrated to the U. S. He invited me over where she taught me how to make gnocchi from scratch. What amazed me was how she brought this little serrated board out and flicked these little pasta pillows across it, giving it the final shape. She then cooked it up in what I remember to be a toasted sage brown butter sauce. This brought back great memories. I can't wait to make this.

I find it interesting that everyone says your pasta water should be as salty as the sea. Where are they getting this information? I actually tested it out, I googled how much salt there is in seawater (about 3. 5%) and added the same amount of salt to my pasta water. The pasta turned out unbearably salty. I since started adding about 2%. So, boys and girls, when you make a claim, make sure you're not just repeating what somebody else had said and actually know what you're talking about.

A microwave does not roast it boils a misconception people still make. Do not over work the dough gnocchi means little pillows and that's what they should be the opposite of pasta. And try and make a rib using a fork/gnocchi board they hold the sauce better Johns lazy or doesn't know: -)

This is basically a sweet potato version of halushki (Hungarian dish, that i love with all my heart, which is extraordinarily intriguing (im Hungarian Gypsy. We do regular gnocchi, cottage cheese, cream cheese, bacon, browned butter (only one version of several.

Thank you Chef John I can never remember how to pronounce gnocchi, I work with two native Italian women, both very, very good cooks and bakers, and when I would try and pronounce gnocchi they would smirk at me. Smirk No More Ladies!

In my town we do it the other way around. If she floats she's a witch and we hang her. If she drowns she's not, well mistakes do happen. Haven't had anyone floating yet, but you can never be careful enough so we keep testing.

Maybe letting the dough rest initially, before rolling it out into snakes, would be a good thing to try. I'm going to try this with butternut squash as I don't have sweet potatoes/yams on hand. Thanks for this recipe, Chef John!
