I m not a huge dessert guy, but I do have a soft spot for a nice pudding, and puddings don t get any nicer than this incredible Butterscotch Budino. Speaking of soft spots, this stuff is rich, and addictive, so please enjoy in moderation. Mike: I love you Chef John and I have made quite a few of your recipes, however, I m going to make this with boxed pudding mix and say I made it from scratch and my family will never know the difference. Except for my son who is not old enough to drink and doesn t know what rum taste like. But whatever, pudding that makes you feel fuzzy on the inside is never a bad idea.

Butterscotch is my absolute fave, and I wish there were more recipes utilizing it. May I ask: why did you opt for a caramel sauce rather than a butterscotch sauce, or is there even a difference? When you were making the budino, didn't you have a butterscotch sauce before you added cream/eggs/cornstarch to it? In other words, could you have reserved some of that cooked brown sugar/salt/butter to use as the topping?

Looking for advice in the first step: I have an electric range so boiling sugar can get dicey. Any tips to make sure it doesn't overheat suddenly? For that matter, getting back up to temperature in time when one adds the cream? I have little experience in making desserts. I am willing to lose one of my cheap pans if practice doesn't go well.

I am so mesmerized right now. as I'm making Chef John's Almond Biscottis. A couple of weeks ago I made Chef John's Italian Creme topped with olive oil and flaky salt. Fantastic!

That pudding looks as smooth as a baby s bum. So I m pretty sure budino translates to baby- like skin since pudding also makes a skin. But I definitely made that up.

I save a step by bypassing brown sugar altogether. I add 1 Tablespoon molasses to 1 cup granulated sugar. or thereabouts. I need my cabinet space.

I think a thin layer of chocolate ganache onto top of the butterscotch would be awesome as well. But then of course, it wouldn t be a budino.
