If you're concerned about the final fold not going all the way over and touching the tabletop, it seems to me the solution would be to make the two preceding folds a little asymmetrical in size, leaving one big and one small section on either side of the line. Then fold the bigger section over the smaller section and there should be enough difference in size for the smaller to be completely covered over.

Gosh Chef. and here I am just going left and right with thoughts including. if you used a block of cream cheese instead of butter, would you still get a puff pastry or something very cool and different. which is so very far from this video but not because in very coarse way this is a puff dish as well.

Oh YUM! That looks so tasty. Maybe a slice (or 3) of Prosciutto in there would be nice? Something not too wet? Will definitely try that when it gets a little colder around here.
