I ve always liked Cod, & Spud au Gratin!
It used to be on the menus more,
but since the decline of the cod fishery,
not so much.
My version has chunks of both potatoes, cod,
& onions, in a light cheese sauce.
Savoury, nutmeg, & cayenne make for nice seasoning flavours.
I have used turmeric, it can work, if you like it yellow.
Keep cooking with gas, & keep smiling!

Just a heads up chef John. Cheaper grocery stores on the east coast often dont have shallots. You wont find shallots in most of your New York Walmarts. Not saying you shouldnt use them, you should, but claiming all stores have them annoys the people who went looking for them and couldnt find them.
A tier up has them. Wegmans level definitely does, but also Wegmans is one of the best stores on the planet.

This sort of reminds me of an Icelandic dish we call plokkfiskur. roughly translated it means picked fish. We traditionally use leftover white fish (usually cod, otherwise haddock) and potatoes, along with some onions and seasoning in a roux. Often you take the finished product, put it in a dish and add cheese on top (gouda is the most used and widely available in Iceland) and broil for a couple of minutes

Looks good, i would switch the onions for garlic and cod for flounder/sea-bass/snake-head. That last one is my favorite. They are invasive here so when i catch them i have to eat them. Which is great as they are also delicious. The last thing they have not going for them is they are hideously ugly. So the Gov day i have to kill them, they are tasty, and i don t feel bad about killing something so ugly.

Just happened to have most of the ingredients for this on hand, so I made it tonight. I subbed Tilapia for Cod, and I subbed my own savory salt blend in place of the tarragon. I also made this in an 8 X 8 glass baker. I was impressed with how the potatoes turned out after blending with the cream sauce during baking. Definitely will be making this again!

I made the honey garlic shrimp from last week and it was fantastic. In fact, I made it twice and used up my bag of frozen shrimp.
I m not much of a fish person but I could definitely see my way clear to trying the above recipe. If it involves potatoes, butter and cream, it has to be good.

Crazy, I bought all the ingredients to make Chef John's fisherman pie (cod, potato, spinach) and now this is the recipe today! I instead made cod in brown butter with fresh spinach and M. Pepin's pommes persillade and it was excellent, but I still have plenty of ingredients to try this one!

My mom used to occasionally make creamed cod over mashed potatoes when I was a kid (using dried salt cod. Oh, It was so good. One of my favorites! I made it once but My hubby and kids are difficult and won't eat fish. Would love to have it again. Sigh

As I was shopping at Lidl last week they had frozen Pacific Cod on sale for 2. 99 a package, I think it's 1. 5 lbs, And I bought a package, wondering what I should make with my value, and just like that, John helps me, thanks for sharing!

First time I ve ever heard audio blips in a chef John video. Two of them, and the voiceover just before the sign off was obviously a little different too. I m sure he s just getting used to his new studio.
